4 Message from the Director, Rose Swidan Thank you to all our seniors that participated in the Senior Olympics you are all winners in my eyes & I am so proud of you! Don t forget to sign up for all the great trips and events that we have coming up. We are going to Portofino on the river on August 17th, and our last trip to the Tiger s Game is August 31st. On August 24th, make sure to join us here at the Senior Center for the BBQ luncheon. Looking ahead to September, please pre-register for your flu shot at our Health Fair on September 13th. Also, mark your calendars for the Pumpkin Festival, September 16-18, and stop by the Senior Center to check out our own craft vendors that weekend. Remember to stay safe during these heat waves. 5 Message from Mayor Burcroff We ve had a lot of fun around Romulus this summer already and I encourage you to continue staying active in our community this month. Sounds in Downtown will be every Friday now through the end of August. This has become one of our City s most-attended events and if you haven t gone to one of these summer concerts yet, make sure you get there. Don t forget to do your civic duty on August 2nd by voting in the State Primary Election, or register in the Clerk s Office to vote absentee. The last day to request receiving an AV ballot by mail is July 30th. Remember our privilege to vote is one of the reasons that makes our country great. I hope to see you at the BBQ on the 24th. 6 Recipe Exchange: Mediterranean Nachos Ingredients 1 (7 oz.) bag whole-wheat pita chips 2 diced plum tomatoes 1/2 medium red onion, chopped 1/2 medium cucumber, chopped 2 T. extra virgin olive oil, plus extra drizzle for garnish 4 T. red wine vinegar 1 (15 oz.) can unsalted chickpeas (plus some of the draining liquid for texture) 3 T. tahini 2 T. lemon juice, plus additional slices for garnish Directions 1. Set oven to 375 F. Line baking sheet with parchment paper. 2 cloves garlic 1/4 t.. Kosher salt 1/2 c. 2% low-fat greek yogurt 1 T. chopped dill 1 T. chopped parsley 1 T. chopped mint 1/2 c. feta cheese 1/2 c. part-skim shredded mozzarella cheese 1/3 c. black olives, canned, pitted, chopped 2. Make tomato cucumber salsa by mixing tomato, cucumber, onion, 1 T. olive oil and 2T. Red wine vinegar. Let sit in fridge at least 30 min. 3. Make hummus. Combine chickpeas, tahini, 1 T. lemon juice, garlic cloves, and salt in food processor. Use drained liquid from chickpeas as needed to thin out hummus. The hummus should be thin enough to drizzle over nachos. 4. Make yogurt sauce. Combine yogurt, 1 T. lemon juice, dill, parsley, mint, 2 T. red wine vinegar and 1 T. olive oil. 5. Arrange pita chips on baking sheet lined with parchment paper. 6. Sprinkle feta and mozzarella cheese on top of chips. Bake in oven for 5-7 minutes or until cheese is slightly melted. 7. Top nachos with hummus, yogurt sauce and tomato cucumber salsa by the spoonful. Sprinkle with olives, lemon slices, and a drizzle of olive oil. Congratulations to our Romulus Senior Olympians!
