3 STONE COUNTY CONNECTION February SPOTLIGHT PROVIDER Tammy Kennedy, Director of Nursing Tammy lives in Lucedale, MS, is married and has two lovely children, Joshua and Hannah. She is SCNRC s Director of Nursing, and has been working at the Rehab since Tammy has been a nurse for 28 years. She enjoys fishing, spending time with family, and attending church. Tammy says she loves working with a great group of people and residents. Thank you for helping maintain a big role for our facility! EMPLOYEE OF THE YEAR Sonya McBride, LPN, Staff Development/ Infection Control Nurse Sonya is the Staff Development/Infection Control Nurse at SCNRC and has been an employee here for seven years. She received her Nursing Degree at JCJC, and has seven years of experience as an LPN. Sonya resides in Hattiesburg with her husband, Troy McBride and two daughters, Elshanti Smith and Ktryka Smith. Sonya enjoys vacations and spending time with her family. Sonya is ecstatic to have been chosen as Employee of the Year! She also looks forward to working and providing continuous care at SCNRC for many more years to come. ABOVE THE LINE EMPLOYEE Kim Huddleston Kim Huddleston has been a CNA for over 21 years and has worked at SCNRC for ten months. Kim says she loves working as a CNA because she is able to give good, tender, loving care to her patients. Kim has three beautiful daughters. She enjoys going to church. Her hobbies include shopping and spending quality time with her girls and family. Congratulations, Kim! RESIDENT OF THE MONTH Dorothy Magee Dorothy is 67-years-old, and is a native of Laurel, MS. She has one daughter. Dorothy worked in Food Services for more than 30 years. Her hobbies include shopping at Dirt Cheap, going to garage sales, spending time with family and friends, and going out to restaurants. Congratulations, Ms Magee, you deserve this honor!

5 STONE COUNTY CONNECTION February RESIDENT SUCCESS STORY Susan Gunter Susan Gunter is 66-years-old. Susan came to us from the Smoky Mountains of North Carolina. She said that if she is a success story, it is because of everyone who has helped her along the way. She became a resident just before Thanksgiving. She was so weak that she couldn t lift her head to put a pillow underneath. The knowledge, patience and perseverance of aides, nurses, therapists and all the staff changed that. Now she has a discharge date of January 19, She enjoys showing pictures and telling stories of life in the mountains as well as Michigan where she lived her first 50 years. She is known as Mrs. Michigan, a name Bill Faust gave her. In Mrs. Gunter s words, I am so grateful to all who helped me here. They believed in me more than I did. I had to work hard because I couldn t bear to disappoint them. We will miss you, Mrs. Susan, and could not be more proud of you! RECIPE OF THE MONTH Requested by Resident Councils Lasagna Rolls Ingredients: 1 (15-ounce) container whole milk ricotta cheese 1 (10-ounce) package frozen chopped spinach, thawed, dry 1 cup plus 2 tablespoons grated Parmesan 3 ounces thinly sliced prosciutto, chopped 1 large egg, beaten to blend 3/4 teaspoon salt, plus more for salting water 1/2 teaspoon freshly ground black pepper 1 to 2 tablespoons olive oil 12 uncooked lasagna noodles 2 cups marinara sauce 1 cup shredded mozzarella (about 4 ounces) Directions: Add a tablespoon or 2 of oil to a large pot of boiling salted water. Boil the noodles until just tender but still firm to bite. Drain. Arrange the noodles in a single layer on a baking sheet to prevent them from sticking. Butter a 13-by-9-by-2-inch glass baking dish. Pour the bechamel sauce over the bottom of the prepared dish. Lay out 4 lasagna noodles on a work surface, then spread a large spoonful (about 3 tablespoons worth) of ricotta mixture evenly over each noodle. Starting at 1 end, roll each noodle like a jelly roll. Lay the lasagna rolls seam side down, without touching, atop the bechamel sauce in the dish. Repeat with the remaining noodles and ricotta mixture. Spoon 1 cup of marinara sauce over the lasagna rolls. Sprinkle the mozzarella and remaining 2 tablespoons of Parmesan over the lasagna rolls. Cover tightly with foil, bake until heated through for about 20 minutes. Uncover and bake until the cheese on top becomes golden, about 15 minutes longer. Let stand for 10 minutes. Meanwhile heat the remaining marinara sauce in a heavy small saucepan over medium heat until hot, and serve alongside.
6 6 STONE COUNTY CONNECTION February 2018 A Letter from the Administrator GO RED FOR WOMEN Heart disease is the number one killer of women, causing one in three deaths each year. That s approximately one woman every minute! A heart attack does not always have obvious symptoms, such as pain in your chest, shortness of breath and cold sweats. In fact, a heart attack can actually happen without a person knowing it. It is called a silent heart attack, or medically referred to as silent ischemia (lack of oxygen) to the heart muscle. Silent heart attacks are more common in women than in men. Women and their physicians may also be more likely to chalk up symptoms of a silent heart attack to anxiety and dismiss them. However, the risk factors for a silent heart attack are the same as those for a recognized heart attack, and include high Shelia Warren Assistant Administrator blood pressure, high cholesterol, smoking, family history of heart disease, obesity and age. You can control or treat these risk factors with lifestyle changes and your healthcare provider s help.for more information, visit goredforwomen.org. From the Desk of the Director of Nursing CELEBRATING BLACK HISTORY MONTH February is Black History Month. All month long, we will be celebrating the life, achievements, and accomplishments of notable African Americans who paved the way for generations to follow. One remarkable African American is Mary Eliza Mahoney. Mary was the first African American woman to be trained as a nurse. She obtained her credentials in 1879, and worked for many years as a private care nurse. She served for two years as director of an orphanage for African American children and helped found the National Association of Colored Graduate Nurses in The association aimed to eliminate discrimination and celebrate nurses of all races for their professional accomplishments. Tammy Kennedy, RN Director of Nursing Mary Eliza Mahoney was a pioneer in her day. She would be so proud to see all the African American women currently working as CNAs, LPNs and RNs, as well as in other professions. Her dreams of equal opportunities for all people, regardless of gender and race, have come to fruition. Although there s still more to be done, it s unquestionable that Mary Mahoney s legacy has changed American society for the better.
