3 STONE COUNTY CONNECTION March EMPLOYEE SPOTLIGHT Mr. Stephen A. Smith, MBA RDN LD Mr. Stephen is our new Corporate Director of Nutrition Services. Stephen joined our team this past December and oversees Nutrition Services at the facility. He was born and raised in Virginia and Kentucky and spent his later years in Indiana and Florida. He received his BS in Dietetics at Ball State University, and his MBA from the University of Saint Francis, both in Indiana. He has almost 20 years of experience as a Registered Dietitian, most of which was spent in Long Term Care. Stephen has two sons, Matt and Joshua, and one amazing toy Chihuahua. He loves being in the water, playing volleyball and the piano, and going camping. He has a passion for the elderly and nutrition research, and it shows! RESIDENT SUCCESS STORY Billie Fonville Billie Fonville lives in Poplarville, MS and is 71-years-old. He has four children, and 16+ grandchildren and great-grandchildren. Fonville worked as a caregiver for three years. Her hobbies include fishing, reading short stories, and reading the newspaper. She was admitted to the facility with concerns of her physical ability, diet, and more. Since joining us, Billie has transitioned to a walker, and now ambulates without. equipment. SCNRC s team is proud of your success, Billie! Keep up the great effort. ABOVE THE LINE EMPLOYEE Paulette Bond, Dietary Paulette has been employed at SCNRC for seven years in the Dietary Department. She lives in Wiggins, MS has three children, and married to Patrick Bond. Paulette enjoys spending time with family and cooking for the residents here at the facility. Seeing them eat brings joy and a smile on her face. Congratulations, Paulette! We appreciate your dedication and services to our facility! RESIDENT OF THE MONTH William Faust William Faust is 80-years-old, and is a native of Hattiesburg, MS. He has four children, eight grandchildren, and 11 great-grandchildren. He enjoys hunting, fishing, and mechanical work. Faust was a Director of Vehicle Maintenance for many years (motorcycles, boats, etc). He also served as a Navy Equipment Operator, a Pilot and FAA Inspector for many years as well. Faust paves the way for other residents here at the facility and will offer his hand to help others when needed. Congratulations, Faust! You deserve this honor.

Rresidents LC Hillman and wife Mary Hillman RECIPE OF THE MONTH Provided By: Harold Tynes Chicken/Dumplings Ingredients: 3 tablespoons butter 1 medium onion, cut into 1-inch pieces 5 medium carrots, cut crosswise into 1 1/2-inch pieces 1/2 teaspoon dried thyme 1 cup (spooned and leveled) all-purpose flour 1 can (14.5 ounces) reduced-sodium chicken broth Coarse salt and freshly ground pepper 1 1/2 pounds boneless, skinless chicken thighs, cut into 2-inch pieces 2 tablespoons chopped fresh dill, or 3/4 teaspoon dried dill weed 1 3/4 teaspoons baking powder 1/2 cup plus 2 tablespoons milk 1 package (10 ounces) frozen peas Directions: In a Dutch oven (or a 5- to 6-quart heavy pot with a tightfitting lid), heat butter over medium. Add onion, carrots, and thyme. Cover and cook, stirring occasionally, until onion is soft, about 5 minutes. Add 1/4 cup flour and cook, stirring, 30 seconds. Add broth and bring to a boil, stirring constantly; season with salt and pepper. Nestle chicken in pot; reduce heat to mediumlow. Cover and cook, stirring occasionally, 20 minutes. Meanwhile, make dumplings: In a medium bowl, whisk together remaining 3/4 cup flour, dill, baking powder, and 1/2 teaspoon salt. With a fork, gradually stir in 1/2 cup milk to form a moist and soft batter. It should be just a little thicker than pancake batter and should easily drop from the tip of a spoon. (Add additional 2 tablespoons milk if too thick.) Set aside. Stir peas into pot. Drop batter in simmering liquid in 10 heaping tablespoonfuls, keeping them spaced apart (dumplings will swell as they cook). Cover, and simmer until chicken is tender and dumplings are firm, 20 minutes. Serve.

With spring on the horizon, it could not be a better time to get your daily dose of fresh air and exercise. Spending time outside makes you healthier, and it is scientifically proven! Here are a few reasons why going outside is healthy for you: 1) It makes exercising easier Research shows that the color green makes exercise feel less strenuous. During the study, those who exercised in front of the color green as compared to other colors, showed fewer mood disturbances and felt less exertion. Also, exercising outside is more enjoyable than exercising inside. 2) It helps you lose weight Outside terrains, such as mountains, aide in weight loss. Higher altitude helps you lose weight because they speed up your metabolism. Shelia Warren Assistant Administrator 3) It boosts vitamin D 80 to 90 percent of our vitamin D intake comes from the sun. Therefore, being outsides helps with bone growth, cell growth, and neuromuscular and immune function. So, make it a goal to spend at least minutes outside each day. If you are feeling motivated, hit the trails and go for a walk, bike ride, or tend to your garden. Don t forget the sunscreen! From the Desk of the Director of Nursing WEAR BLUE FOR NATIONAL COLON CANCER AWARENESS March is National Colon Cancer Awareness month. Knowing the facts of colon cancer, which is a preventable cancer, can help you stay healthy! Colon cancer is the second leading cause of cancer death and one in three adults between 50 and 75 years old are not being screened. That is a significant number because 90 percent of those being diagnosed are over the age of 50. Early detection is the key to preventing colon cancer. When it can be detected early, treatment is more likely to be successful. If done in time, it can be prevented via the removal of Tammy Kennedy, RN precancerous polyps. The most common screening tests are colonoscopies. It is Director of Nursing 90 percent treatable and beatable when detected early. The most important risk factors are people who have a sedentary lifestyle, are obese, or smoke tobacco. Diet also plays a huge part in preventing colon cancer. Diets that are fiber deficient, have high intakes of fat, calories, and processed meats, increase their risk of developing colon cancer. So schedule an appointment today with your local gastroenterologist, and get screened. For more information, visit
