Smoked Cheddar Potatoes Au Gratin Adapted from Smoked Cheddar Cheese Potatoes Au Gratin by Chef Thomas Clay, The Cabbage Patch Restaurant, Snohomish This delicious side dish gets a unanimous thumbs-up! serves 4 to 6 3 large russet potatoes, skin on V red onion, thinly sliced 4 garlic cloves, minced 4 ounces grated smoked cheddar cheese 16 ounces heavy cream 2 teaspoons ground nutmeg 1 teaspoon dried thyme salt and freshly ground black pepper Preheat oven to 400 degrees. Scrub potatoes with a brush under cold, running water and dry well with a kitchen towel. With a mandoline set to just past the 1/8-inch mark, thinly slice potatoes lengthwise and place them in a large mixing bowl with the onion, garlic and cheddar. Toss to mix, add cream, and toss again. Add nutmeg and thyme, and add salt and pepper to taste. Mix well, so that the potatoes are well coated with the cream and cheese mixture. Transfer mixture into an 8-inch square glass baking dish, or other ovenproof baking dish that holds potatoes in a 2- to 3-inch layer. Using a spatula, press down mixture so potatoes are level and covered with cream. Bake at 400 degrees for about 1 hour, or until potatoes are fork-tender, browned and bubbly.
