Spies of Mississippi is about a secret spy agency formed by the state of Mississippi to preserve segregation in the 1950s and 1960s. Don't miss director/producer Dawn Porter when she joins us at a special public screening February 28 at the Northwest African American Museum. Ken Burns, who has created so many films that shed light on important chapters in American history, has a new documentary premiering this spring. The Address is about a school in Vermont where the students are encouraged to practice, memorize and recite the Gettysburg Address. Ken has launched a national effort to encourage everyone in America to record a video of themselves reading or reciting the speech, and we re inviting people to submit their videos to KCTS 9. The first African-American woman to win a Pulitzer Prize for literature, Walker continues to shine a light on global human rights issues. Braised Brussels Sprouts SERVES 6 Executive Chef Dan Ratigan The Fireside Restaurant, The Resort at Port Ludlow 2 tablespoons water 4 ounces thick-cut applewood-smoked bacon, diced small 1V pounds Brussels sprouts, trimmed, cut in half, and washed W cup yellow onion, diced small 2 cloves garlic, chopped 1 tablespoon fresh thyme 1 cup chicken stock or low-sodium broth 3 tablespoons white wine vinegar kosher salt & freshly ground black pepper olive oil Add 2 tablespoons water to a large skillet and set over medium-high heat. Add bacon and cook until fat renders, about 2 to 3 minutes. Remove bacon and add Brussels sprouts, onion, garlic and thyme to the pan with bacon fat. Cook until slightly caramelized. Add stock, vinegar and cooked bacon. Simmer until tender. Season with salt and pepper. Finish with a drizzle of olive oil. chef s note: When preparing Brussels sprouts from the stalk, snip the end of the sprout, cut in half and then wash. You do this because as the sprouts grow, dirt can collect on the inside and so the final layers may be gritty. This prevents the grit from becoming a part of your meal.
