1 CAMPUS SERVICES INSIDER SUMMER 2011 EDITION CAMPUS SERVICES BY THE NUMBERS Housing Residence halls are full for the academic year. Contract renewal for current residents began on January 10 and lasted until January 31. During this period, current residents had the opportunity to retain their same room or select a different room from across the housing portfolio. More than 830 students took advantage of this opportunity and decided to stay on campus for a second or even a third year. This represents an 8.2% increase in renewals over last year. On February 1, new students to the university were able to begin applying for housing. Over the last few years as the academic profile of the university has changed, more students are expressing a desire to live on campus. The online housing application for fall 2011 was closed for both new and current students on May 17. Students interested in campus housing for the academic year had the opportunity to place themselves on the housing wait list. Housing has provided students on the wait list with information from landlords near campus who have indicated they have capacity. As space becomes available, Housing is contacting students in the order entered on the list. As of August 26, housing demand is up 1.8% with occupancy of 102.3%. Horton Dining Award for Retail Sales Single Concept Large School Category from the National Association of College & University Food Services (NACUFS). The NACUFS membership consists of approximately 550 institutions of higher education from across the U.S. and Canada, and nearly 500 industry members from the food, equipment, and consulting market segments. According to the NACUFS website, in college and university culinary arts, the ultimate professional tribute is a NACUFS Loyal E. Horton Dining Award. Named for a NACUFS founder, past president and highly regarded innovator, the Loyal E. Horton Dining Awards celebrate exemplary menus, presentations, special event planning, and new dining concepts, and provide an avenue for sharing ideas and creative presentations in campus dining services. Judging criteria included: Menu and Meal, Facility Design and Merchandising, Marketing, Nutrition and Wellness, Sustainability, Financial, and Customer Satisfaction. This is the second Horton award that Mick & Mack s has won since opening in Kingsgate Wins Marriott Award The Kingsgate Marriott Conference Center was recently recognized for their outstanding achievement in community service by Marriott International, Inc., with the Spirit to Serve quarterly award for community service. Kingsgate staff s recent community service projects include providing breakfast and linen donations to Ronald McDonald House, supporting the Children s Miracle Network and hosting a Bowl a thon to raise money for the Cincinnati Children s Hospital, and participating in the Paint the Town Initiative. University Dining Welcomes New Culinary Talent University Dining Services is proud to welcome two new chefs to the UC culinary team, Chef Jonathan Hunt and Chef Cooper Thomas. Chef Jonathan Hunt, a Cincinnati native, recently joined the University Dining Services team as the new executive chef for Mick & Mack s Contemporary Café. A graduate of the Cincinnati State Culinary Arts Program, Jonathan has worked in various kitchens throughout the Cincinnati area including Jeff Ruby s Carlo & Johnny and most recently as the executive chef at Mariemont s Quarter Bistro, where he was praised for his noteworthy seasonal menus. He has been a part of the Carnegie s Art of Food Exhibition featuring local culinary artists and restaurants and has been reviewed in Cincinnati Magazine. Jonathan enjoys creating food with great flavor and texture and is looking forward to adding his unique culinary twist to the new Mick & Mack s menu this fall, which will include vegetarian and vegan options.
3 Chef Cooper Thomas recently joined the University Dining Services team as the new residential executive chef. Cooper is a graduate of Johnson & Wales University in South Carolina. He has an associate s degree in culinary arts and a bachelor s in food service management. His culinary experience spans positions as executive chef at Jeff Ruby s Waterfront Restaurant in Covington, Kentucky, where he was in charge of all à la carte and banquet responsibilities, to executive chef at the Wild Dunes Resorts in South Carolina. Cooper is looking forward to adding fun and variety to residential dining this school year. Additionally, Executive Chef Kiril Gallovitch has been promoted to District Chef of Dining Services, overseeing all culinary initiatives on campus with a focus on catering. Previously, Chef Kiril was the executive chef for Residential Dining. His extensive culinary experience includes his role as executive chef for Jeff Ruby s Steakhouse at Belterra Casino & Resort. He also worked as the banquet culinary operations chef for the Flamingo Hotel & Casino in Las Vegas, Nevada, where he prepared dining experiences for 50 to 5,000 guests. Kiril s strong ability to transform great recipes into creative menus will enhance the variety in the overall dining experience. Campus Recreation Center Journal Your Journey Blog Update Journal Your Journey blog winner, Kirsty Strong, has made HUGE strides toward her goals of being swimsuit ready and confident this summer. Since beginning her exercise program in January 2011 with her CRC ielite Personal Trainer, and changing her diet as prescribed by the CRC s Registered Dietitian, Kirsty has lost a total of 20 pounds and 17 inches, and has gone from a size 12/14 to a size six. You can read all about where she s been and where she s going by visiting her blog at: Welcomes New Affiliate Partners In March, the Environmental Protection Agency, with more than 1,500 employees, joined Cincinnati Children s Hospital Medical Center, University Hospital, UC Physicians, and Central Clinic, Inc. as another affiliate partner with Campus Recreation. Employees are eligible for the affiliate membership rate. Parking Services Celebrates Customers Spring Quarter started with a Customer Appreciation week in Parking Services. A drawing for two parking permits occurred and light refreshments were served. In an effort to be included in the drawing, a customer survey had to be completed which allowed Parking Services to receive feedback from 1,073 parking customers. The survey focused on gathering feedback on How Are We Doing and How Can We Provide Better Online Services. The survey results will be used to improve customer service. Current Construction Projects Due to the construction on Morgen s Hall, a construction fence closed off half of Scioto Way from Morgen s to Scioto Hall, allowing only one way traffic southbound. The project affects the traffic flow on Scioto Way (formerly Apartment Drive) and the loss of the six metered parking stalls outside the building. Parking Services is also working with construction management to improve the lighting of Kingsgate Garage. Get Ready for Football Season The Bearcats 2011 football season begins on September 3. As in years past, expect changes with parking when games occur on campus. View the season game schedule. Tailgating will occur in Lot 22 located on the east campus and on Vine Street. There will be more information to share as we get closer to the start of the season. Conference & Event Services High profile Innocence Conference Conference & Event Services (CES) managed the high profile Innocence Conference at the Freedom Center on April CES provided registration services, provided marketing and program materials, and coordinated facility and catering logistics, special events, and travel arrangements for 30 international guests.
4 The Innocence Network Conference drew more than 500 attendees from 63 member organizations across the United States and representatives from more than 20 countries. The objective of the conference was to bring selected scholars, lawyers, and more than 100 exonerees from around the world together in one place to interact and learn from one another. The conference was also the kick off for the art exhibit, Illustrated Truth: Expressions of Wrongful Conviction, featuring the work of death penalty exonerees and a few that are still imprisoned, and was displayed at the Freedom Center through July 9. This is one of 32 conferences that CES managed in FY11. Upcoming CES managed Conference at Kingsgate CES is assisting Facilities Management in managing the Midwest Association of Higher Education Facilities Officers (MAPPA) 2011 Educational Conference and Annual Meeting October 9 12, at the Kingsgate Marriott Conference Center. The Facilities Departments of Cincinnati State Technical and Community College and the University of Cincinnati are the co hosts for MAPPA Approximately 300 attendees/representatives of colleges and universities in the Midwest region of Ohio, Indiana, Michigan, Illinois, Iowa, Wisconsin, and Minnesota are expected to attend. MAPPA 2011 also includes an Exhibit Hall/Trade Show with 55 exhibitor organizations; 18 educational presentations; campus tours of UC and CSTCC; golf outing; casino excursion; and Gala Banquet/Awards Ceremony at the Midwest Culinary Institute at CSTCC. UC Bookstores Introduce New Online Textbook Adoption Tool The new UC Bookstores online adoption tool adds many unique benefits to make the adoption site more intuitive and user friendly: Easy: Faculty can renew previous term adoptions and easily readopt materials from prior courses. Multiple sections of the same course using the same texts can all be adopted with one adoption entry. Flexible: The new tool allows for both approver and submitter roles, providing flexibility for colleges or departments that may require department adoption submission approval. Searchable: Faculty will also be able to search their past adoption choices. With our new expanded database, faculty can quickly and easily find the course materials they need. Clear: The summary page provides clear confirmation details before final submission of the adoption. UC Bookstores edoption tool users have been sent an with a temporary password for the new online adoption tool. New customers use the tool by doing the following: Go to Click on online adoptions in the left column. Click on the New? Register Here box. Complete the required information and click continue. The store supplied password is 032. You are ready to enter your adoption information. Trademarks & Licensing Manages Filming Agreements Did you know that the Trademarks & Licensing department is also responsible for managing agreements covering filming and photo shoots on campus? T & L has worked with a variety of production companies for projects ranging from still photos for medical brochures, websites and annual reports, to filming scenes/episodes for television shows or commercials. Some of the TV projects have been aired on Animal Planet, the Disney Channel, and MTV. This past year, Febreeze was on campus filming a commercial with Dhani Jones in the Campus Rec Center. Ides of March Films, Inc., filmed scenes outside University Hospital and the Field Studies Center and product placement for the George Clooney Ides of March movie, set to be released in October 2011.
5 While these projects can be interesting and sometimes fun to see being done, the main goal is still to protect the university s reputation, and to make sure the appropriate value is received much like it is for the merchandise produced by our licensees. During the renovation, AV services and acoustic enhancements will be installed, improving the use of Mick & Mack s as a preferred on campus destination for personal and professional events. Highlights of the project include a more prominent entranceway, new furniture and carpet, and installation of a fireplace. During these summer months, when the weather cooperates, our popular wine tastings and Epicure s Delights dinners have been taking place on the Mick & Mack s patio and plaza and outside TUC.
6 Project work is also underway in the TUC Food Court, where Taco Bell will move into the space previously occupied by Pizza Hut, and Papa John s will move into the space previously occupied by Gold Star Chili. Both retail food locations are scheduled to open in September. STAFF ANNOUNCEMENTS Lisa Bunkley Boyd is returning to Parking Services as the Assistant Director of Field Operations on September 6. Lisa was employed at the University of Cincinnati in Parking Services for 16 years prior to leaving for an opportunity to oversee parking at Northern Kentucky University. Her experience with the operation will be a valuable asset in the new academic year. Director of Parking Services, Darlene Bunton, presented at the 2011International Parking Institute (IPI) this spring. IPI, the leading association of parking professionals, recognized Darlene s leadership in the parking industry and requested that she present. As a result of her presentation, other institutions, including Sinclair Community College, that were here in July, have contacted Darlene about visiting UC and getting more insight into best practices and procedures in parking. Tom Ferguson was recently appointed the new manager of Mick & Mack s. Tom has been with University Dining Services since 2009, and was most recently the manager at the Faculty Club located in the Richard D. Lindner Center. Director of Trademarks & Licensing, Marty Ludwig, gave three presentations last year, including one called Licensing 101 at the International Collegiate Licensing Association (ICLA) Winter Symposium, one on Internal Consumption Policy and Managing Internal Campus Suppliers for the Collegiate Licensing Company (CLC)Seminar, and one on NCAA Compliance & Licensing at ICLA/NACDA Annual Convention in June. Assistant Vice President for Campus Services Operations, Pallavi Patel, was recently appointed as an instructor for the Principles of Management class at UC Blue Ash College. Bev Romer officially joined the Campus Services Marketing team as senior graphic designer in May. Bev had been temporarily serving in this role since December 2009 and brings more than 30 years of graphic design and production experience to Campus Services, including 24 years at the world s largest independent brand design agency, LPK. Campus Services senior associate vice president, Steve Sayers, was featured in the May/June edition of The College Store, the official publication of the National Association of College Stores (NACS). In the article titled View from the Corner Office, Steve discussed the decision to outsource the operations of the UC Bookstores.
7 CRC director and interim director of MainStreet Operations, Kim Schmidt, received the 2011 National Intramural Recreational Sports Association (NIRSA) Region III Award of Merit, given to one professional representing the states of Ohio, Michigan, Indiana, Illinois, and Wisconsin, and the province of Ontario. The award is provided as a means of recognizing the outstanding contributions of individual members, made on either a regional or statewide basis, within NIRSA. Corinn Shemak, a program director in Conference & Event Services, was recently appointed as the instructor for the Meeting and Event Planning I, II, and III classes at UC Blue Ash College. The classes are part of the Administrative Management Technology certificate program in the Office of Information Technology. Director of Marketing, Publications, & Facilitation, Amy Browns Taylor, was recently appointed to the Alumnae Advisory Committee of the Pi Beta Phi Women s fraternity (Ohio Kappa chapter) at the University of Cincinnati. Ian Sroufe, of University Dining Services, was recently promoted to director of operations. Ian previously served as director of residential dining and has been with dining services for 10 years. As director of operations, Ian oversees residential dining, retail, catering, and concessions. Geno Svec joined University Dining Services this summer as resident district manager and manages all University Dining Services Operations. Geno s experience in both the culinary and operational sides of the food service industry makes him a great leader of the dining services team at UC. His previous experience includes regional vice president for Ovations Food Services, a project manager for Centerplate, and an executive chef for Service America. He has managed culinary operations at venues such as the Ervin J. Nutter Center, Northern Kentucky Convention Center, and the New Orleans Superdome. We are looking forward to Geno s fresh approach to dining services and his culinary creativity. Ephrem Tefera returned to the Parking Services team in July as facility superintendent. Ephrem, a former parking facility attendant, had previously worked in Grounds maintaining our beautiful campus. Brett Toothman joined Campus Services Operations as an IT analyst on April 25. Brett has been a Campus Services student helper since he was a freshman here at UC. He earned his Bachelors of Science in Information Technology last spring. Brett is currently working on his master s in computer science in the College of Engineering/Applied Science.
