3 The Theme Nutritional Pursuit Our theme for the 2018 Back To School Conference is Nutritional Pursuit! You will see this theme carried throughout the next two days of the conference and in our last session in which we will host a trivial pursuit themed activity that we hope everyone will enjoy! In each breakout session you will notice the presenters will have one slide per session that has one of the trivia pie pieces on it. The information on the slide with a pie piece on it is information that we want to emphasize and that may come in handy later. 6 OPENING SESSION CHEF DEMO Chef Michael McGreal CEC, CCE, CHE, FMP, CHA, MCFE Department Chair, Culinary Arts, Joliet Junior College Chef Michael J. McGreal has worked in the foodservice industry for over 35 years, holding positions at some of Chicago s premier restaurants and hotels, starting his career as a foodservice and banquet chef for Northern Illinois University. He earned his chef training degree from Washburne Culinary Institute in Chicago, his bachelor s degree in hospitality organizational management from the University of St. Francis, and his master s degree in management from Robert Morris University. Chef McGreal joined the prestigious Culinary Arts Program at Joliet Junior College in 1996 and has served as the department chair since Chef McGreal is a chef consultant for the USDA s Institute of Child Nutrition (ICN) and a chef trainer for Culinary Nutrition Associates, LLC. In this capacity he conducts trainings related to the Healthy Schools Initiative for foodservice professionals around the country. He also served on the First Lady s National Advisory Council for the Chefs Move to Schools Initiative since Chef McGreal has earned many industry certifications. He also earned many honors including the American Culinary Federation Presidential Medallion in 2011, the 2009 Postsecondary Educator of the Year award from the Foodservice Educators Network International, the Illinois Federation of Teachers Everyday Hero Award, and the Professional Achievement Award from the University of St. Francis. Chef McGreal as authored and co-authored four books including Culinary Arts Principles and Applications, Culinary Math Principles and Applications, 50 Effective Knife Techniques, and the National Apprenticeship Training Program for Cooks.
7 SPECIAL GUESTS State Superintendent of Education Tony Smith, Ph.D. Dr. Tony Smith was appointed by the State Board of Education effective May 1, Prior to his arrival at the Illinois State Board of Education, Dr. Smith was the executive director of the W. Clement & Jessie V. Stone Foundation, which annually awards more than $5 million in grants that support children's development and education. Before joining the Stone Foundation, Dr. Smith led the Oakland Unified School District in California, where he helped improve academic outcomes, district finances, family engagement and organizational coherence during his four-year tenure. Dr. Smith has served in a wide range of leadership roles, primarily in his native state of California. Prior to being superintendent in Oakland, Dr. Smith served as Deputy Superintendent for the San Francisco Unified School District, where he led efforts to close the achievement gap. He also served as Superintendent of the Emery Unified School District. He previously led the Math, Science and Technology Initiative at the Emeryville Citywide Initiative. He oversaw several major programs at the former Bay Area Coalition for Equitable Schools, now known as the National Equity Project. Dr. Smith earned his bachelor's degree in English in 1992 from the University of California, Berkeley, where he was captain of the football team. He went on to earn his master's and doctorate degrees in the Division of Language, Literacy and Culture from Cal's Graduate School of Education. Dr. Smith and his wife, Kathleen, an Oak Park native, and their two daughters reside in River Forest. Evelyn is proud to serve the residents of the State of Illinois as their 47th Lieutenant Governor. She is a wife, working mother of three and an attorney by trade. She was formerly an adjunct professor of law and a Wheaton City Councilwoman. Evelyn was born to teenage parents in Hialeah, a neighborhood outside of Miami, FL. Her mother was a Cuban refugee and her father, an Ecuadorian immigrant. Evelyn recalls moving frequently as a child because her parents were unable to afford rent. While they were of little means, her parents were determined to give Evelyn every opportunity to succeed. Growing up, Evelyn developed a love for the arts. She learned how to play the piano at a local community center and was accepted into The New World School of the Arts in Miami, FL. Evelyn not only became an accomplished pianist, she cultivated a love for learning. This educational opportunity allowed her to pursue a college education at Florida International University. Following graduation, Evelyn moved to Chicago to attend The John Marshall Law School where she developed an understanding and passion for the law and for Illinois. Evelyn soon joined Illinois Attorney General Jim Ryan s office as an Assistant Attorney General where she fought to protect the people of the State of Illinois. In 2010, Evelyn suffered an accident while walking on Wheaton city property. Subsequent medical examinations revealed that she has Multiple Sclerosis. Evelyn vowed to never let her MS stop her. She proceeded to run for, and win, an election to the Wheaton City Council on a platform of delivering efficient, streamlined government. As Lt. Governor of Illinois, Evelyn is committed to fighting for all Illinois residents. She applies the same passion to her latest role that has propelled her throughout her life, from humble beginnings in Hialeah, FL to becoming Illinois first Latina Lieutenant Governor.
