2 ACADA International Cake Show Australia 2018 Competition Schedule Held at Brisbane Showgrounds Exhibition Building, Upper Level Gregory Terrace, Bowen Hills Brisbane, Australia Friday 18 th May to Sunday 20 th May, 2018 Theme Rich, Regal & Opulent Competition entries are invited for the following classes in Australia s second international Cake Show International Cake Show Australia. ICSA is proudly owned and operated by ACADA (Australian Cake Artists & Decorators Association). We invite competition entries from all around Australia and across the world. Entry is open to everyone (regardless of your skill level). Both the show and competition are open to everyone, not just ACADA members. Entering a cake decorating competition should be fun. It s about competing against yourself, being creative, innovative and stretching your boundaries. Everyone is a winner in our eyes. We wish you great success and know you will produce your own very special masterpiece. Even if you don t win, the friendly, positive and encouraging feedback our professional judges will give you, will place you in a position of advantage next time. So why not take up the challenge and have a go. YOU CAN T WIN UNLESS YOU ENTER.
3 -2- Prizes: $A150 for 1st prize, $A100 for 2nd prize and $A50 for 3rd prize for all categories except for the Collaboration category. Certificates or Rosettes will be awarded to 1st, 2nd and 3rd prize winners in each class. A Rosette, trophy and cash prize of A$1,000 will be awarded to the Show Champion which will be judged by all judges and selected from ALL entries exhibited at the show, including any Collaboration entries. The prize for the Collaboration Class online winner is $500. A special prize of $150 will also be awarded to the best Collaboration entry exhibited at the show. To acknowledge the standard of your work and to encourage you, Gold certificates will be awarded to all competitors achieving a mark of 85% and above, Silver certificates awarded to those achieving 75% and above and Bronze certificate will be awarded to those achieving 65% and above. Additional product gifts may be awarded at the discretion of the category sponsor. Eligibility: Entry is open to EVERYONE regardless of experience level. Beginners, hobby decorators and professionals are all encouraged to enter. You can enter all categories except Class 12 which is open to students only (maximum age 18) and Class 22 which is limited to those at Professional or Masters Levels. Entry Registration & Payment Deadline: 4pm Friday 20 th April 2018, except for Class 24 (Collaboration) entries. Collaboration entries close on 13 th April 2018 this is the date all Collaboration photos must be submitted. Collaboration entrants will receive separate instructions about submitting their work once they have paid their collaboration fees online. Please note late Registration/Entries will be accepted up until Friday 11 th May 2018 Entry Fee: $A10 per entry (payable for each competition piece entered). Upon delivery of your cake at the show, you will receive an official competitor s badge. This must be worn throughout the show. Your competitor s badge will entitle you (the competitor only) to free entry to the show for all three days, FREE OF CHARGE.
4 -3- Entry Process Step 1: The quickest and easiest way to enter is to enter online. This allows you to buy your competition entry ticket, select your category and pay quickly and easily all in one process. No additional paperwork is required other than to drop off your Judges Information Sheet when you deliver your entry at the show. *Preferred Method of Entry: Online entry and payment through ACADA s website. 5 -4- Step 2 - Complete the Judges Information Sheet Complete this and take it with you when delivering your competition cake to the Stewards at the show. The Judges Information Sheet provides information to the judges about what inspired you and what your cake represents. Insert as much information as possible about your cake, skills used, describe the internal structure and the process you adopted to make your competition piece. Photos of inspiration and sketch artwork drawings will also assist and help the judges score your entry accurately. Little things like whether you used moulds or hand-crafted decorations are important. Please limit information to two sheets. Entry Delivery: Cakes MUST be delivered to our friendly Stewarding Team at Brisbane Showgrounds, Exhibition Building, Upper Level, Corner Gregory Terrace and Costin Street, Bowen Hills, Brisbane on Wednesday 16 th May, 2018 between 3-8pm. Judging is on Thursday 17 th May, 2018 from 9am. If your entry is large and needs to be assembled on site, this needs to be done within the drop off times stipulated. The Stewarding Team are here to assist you and to help you throughout the delivery, set up and the collection process. They will greet you with a smile! Parking and drop off: Brief drive-in parking is available for cake drop off, within the Brisbane Showgrounds Exhibition Building. The competition entrance is via Gregory Terrace (on the opposite side of the road to the main showground area). You ll be able to drive into the building right up to the competition area. Vehicle monitors will be there to guide you. Once you have dropped off your cake there is long term parking available, either in the metered parking zone on Gregory Terrace, or in the Showgrounds paid parking area, immediately opposite ICSA. It is located under Brisbane Showgrounds, and is also accessible via Gregory Terrace. Maps will be placed onto the website to assist you.
6 -5- Cake Hospital: In the event your competition cake is damaged in transit on the way to the show, our friendly cake nurse will be there to help. She will have an area ready where you can mend your precious show piece. Please remember to bring a repair kit with you. Results: Results will be published online on Saturday 19th May. Result cards will also be placed on the competition tables next to the winning cakes by 10am on Saturday. Viewing by the public is from 10am Friday. ACADA name plates will be made displaying names of exhibitors and if applicable their company. Names will be displayed with competition cakes from Friday morning (after judging). You must elect when registering your entry, if you would like your company name included on your display card. Judges are not privy to information about who created the exhibits until after judging is completed. No telephone results will be available beforehand and no contact is to be made with the judges before results are published. If you have won 1 st, 2 nd or 3 rd prize or have been awarded a gold, silver or bronze achievement certificate a card or envelope containing your certificate will placed beside your cake. You may take the envelope, but must leave the card until the close of the show. Prize Presentations: Major prize winners (Show Champion and Collab Australia winner) will be presented with their prizes at the Cake Artists Oscar Party Dinner on Saturday night. Any Cake Artists being inducted into the ACADA Hall of Fame will also be announced at the dinner. If they are not at the dinner, their prizes will be presented in the general prize and award presentations, which will be held on Main Stage from 2.30pm on Sunday 20 th May, Cake Collection: Competition Cakes must remain at the show for the full duration of the show. They will be available for collection from the competition area on Sunday 20 th May from approximately 4pm (but no earlier than the completion of the prize presentations on main stage). All cakes must be collected prior to 5pm. No exhibits will be stored or held for you once the show has closed.
7 Competition Rules A separate entry form is to be completed for each class entered. Entries cannot have been previously exhibited or entered, into any previous competition or show, nor can pictures of your entry be published on any form of social media prior to judging. Exhibits must be the sole work of the exhibitor/s. Cleats must be attached to all competition cakes and must be a minimum of 12mm thick (size of a standard Masonite board). Cleats are a base board (smaller than the presentation board) or feet glued to the underneath side of the presentation board. A cleat is hidden under the presentation board. It elevates the presentation board for ease of handling. Only one entry is allowable per person in each class. However, you may enter as many classes as you wish. Edible pearls, gems, cachous, modeling chocolate, food safe lustres and metallic finishes are permitted. Maximum presentation board size in all categories is 60cm x 60cm UNLESS otherwise specified for that class. All presentation boards should be in proportion to the size of the exhibit. No part of your exhibit should protrude beyond the area of your presentation board. There is NO HEIGHT LIMIT in any class except in the miniature class or unless specified for that class. In most classes dummies are permitted, however your entry must be achievable in cake. Read class notes as some categories require cake. Internal structures must be food safe. Boards are defined as a common base on which the exhibit rests. They may be covered as a matter of choice. All entries must be presented on a base (presentation) board. Vases, pots or containers where used are competitor s choice. These may be made of sugar; however, this isn t essential.
8 -7- NOT PERMITTED: Wires must not penetrate cake surface at any time (wires must be covered or picks used). No manufactured ornaments, jewels or pins. Craft glue is only allowed on boards. No computer edible icing images allowed. Patterns printed onto wafer paper are allowable. Cold Porcelain is not permitted. No commercial or fresh flowers are permitted, they must be hand made by the entrant. HELPFUL TIPS: Please read the schedule and rules thoroughly prior to completing and submitting your entry form. With work of a similar standard, hand work would usually score more than if moulds were used. Submit entry forms and pay early, rather than at the last minute. This way you will plan and produce an incredible masterpiece. Extra copies of Entry forms which include the rules, judges information sheets etc. are all on our website www. There is an area on the competition page of ACADA s website for you to ask our Chief Steward questions. You are very welcome to use this. The Stewards are there to help you and will get back to you at the earliest opportunity, please be patient. If travelling from overseas or to Brisbane from Interstate, look on YouTube for the best ways to pack your cake. Competitors often travel worldwide to compete in cake decorating competitions, if packed appropriately, your entry will remain safe. Our website includes accommodation options. Rydges Hotel Fortitude Valley is ideally located right next door to the ICSA venue. Australian immigration laws allow you to bring sugar based products into Australia. Please make sure you declare your entry on the immigration forms you will be given just prior to disembarking your flight.
9 -8- If you are an overseas competitor and require a letter inviting you to the show for Visa purposes, please send a request to our secretary Mary Pisani via acadasecretary@gmail.com. Don t forget to invite your friends and family to book their tickets to the Show to see the amazing competition exhibits. The entire Upper Level of the Exhibition Building (which is massive) will be packed full of local and international shops and stalls (many holding their own demonstrations conducted by your cake heroes). Free demonstrations will be held on the many stages spread throughout the show, on the hour every hour. All events except paid hands-on workshops are FREE once your friends and family have paid for their entrance ticket! Make sure your friends book their tickets on-line early to capitalize on the discounted early bird rates. Once you have delivered your entry to the show, you will receive A COMPLIMENTARY COMPETITOR S 3 DAY PASS to the show. This is for your use only. Only one complimentary pass is issued, regardless of the number of entries.
10 Competition Sections SPECIAL NOTES: This competition has been designed for all skill levels. There is even an option for those truly wanting to test your boundaries this year, to make huge statement cakes. There are several new innovative categories with very few limitations or boundaries. Regardless of whether you are an experienced or new cake decorator, this is the most exciting competition in Australia you can enter. If you are a new decorator, enter, set your own goals and work within your own boundaries. There is no better learning experience. If you are an experienced decorator, cake artist or chef, create something so inspiring you will motivate others to take the plunge into our SWEET WORLD. They will be motivated by what you do, and learn very quickly not only is cake art fun, it s addictive! Class 1: FEATURE CLASS: WEDDING CAKE TABLE 3 OR MORE TIERS Entrants are required to drape and decorate a 1200mm (1.2m) round table (height 750mm) on which your cake will be placed. There are no height restrictions. Cakes may be presented on a board or stand. Dummies are permitted. Your entry must be inspired by a wedding gown designer and follow the competition theme of Rich Regal & Opulent. A photo of the dress/gown that inspired you, together with the name of the designer, must be exhibited with your cake. Any table decorations used are of the exhibitor s choice. They don t necessarily need to be made from sugar, however if they are, they may earn extra points! Large exhibits will be given time for assembly at the show, however it must be within the drop off times stipulated. Class 2: EDDIE SPENCE TRIBUTE A spectacular royal cake Eddie Spence style. Royal iced or fondant covered. Fit for a royal wedding. Ornate, tall, with boundless opulence and beauty. You can incorporate any style of royal work; modern, contemporary or traditional the choice is yours. Dummies are permitted. Your cake can be presented on a presentation board or stand of your choice.
11 -10- Class 3: CUPCAKE BOUQUET Design an innovative cupcake bouquet incorporating 12 cupcakes. Must be creatively displayed on a presentation board. The use of cupcake cases is permitted, all other materials used must be edible. Must be cake. Class 4: JAW DROPPING REALISTICE SCULPTED BUST Competitor s Choice. Must be displayed on a presentation board of a maximum size of 75cm x 75cm. This entry must be sculpted from cake no dummies allowed. Class 5: SUGARCRAFT An exquisite sugar craft figurine, displayed on a presentation board as desired. Maximum height 45cm. Class 6: TIERED MINIATURE CAKE Miniature cake and base board when decorated, must fit within a 15cm (6 ) cube. Class 7: TRANSPORTATION THROUGH THE AGES In this class you can choose one or more of any type of transportation or vehicle from any period. Let your imagination go wild! We are looking for something awesome that will make the audience look in wonder and want to linger! There is NO SIZE LIMIT! If you are looking for a category that will challenge you, this is it. Must include a base board, the size of your choice. Class 8: FLOWERING PLANT Create a magnificent flowering plant displayed in a decorative pot. Must feature all stages of growth and include multiple flowers. Must fit within a 75cm x 75cm area and be presented on a presentation board. Class 9: CONTEMPORARY CAKE WITH STYLISED FLOWERS A modern interpretation, no need to be botanically correct. Go ahead, create your own exquisite design.
12 -11- Must be 2 or more tiers. There is no height limit. Why not impress. Modern, contemporary, flowing, stunning are all words that come to mind! Dummies permitted. Class 10: SCULPTED ANIMAL/s The choice is yours. Why don t you stretch your boundaries? You can choose to do one animal or multiple. You can even incorporate a backdrop (although this isn t essential). Maximum size 1.8m x 75cm. If you incorporate a backdrop it must be fixed and free standing. A minimum of 50% of this exhibit must be made from cake. Pictures of internal structure/construction to be supplied. Class 11: GARLAND OR FLORAL CROWN This circular shaped exhibit must be a minimum of 30cm. Displayed as desired, however it can t lie flat directly on the table. (We want your beautiful exhibit to impress). Exhibit must be presented on a presentation board. Class 12: A NOVEL CELEBRATION CAKE This category is open to Students only (Maximum age 18). Make a beautiful Fondant covered, novelty cake of your choice celebrating any occasion. Must include an inscription and be presented on a presentation board. Dummies are permitted. Class 13: INCREDIBLE EDIBLE ART - Create a framed edible artwork using any form of edible medium such as cocoa powder, royal icing, rice paper, modeling chocolate, pastillage, fondant, piping gel etc. Be creative! It can be a classic painting, or if you are feeling adventurous, why not a threedimension design. Minimum size of 30cm x 30cm. Must be displayed on an easel or supported by a stand of some kind. Max size 60cm x 60cm Class 14: MULTI-DIMENSIONAL COOKIES Design and create a collection of 12 super cute, multi-dimensional cookies using artistic flair, creativity and style. We envisage something exquisite and beautiful, your own version of Marta Torres style. Something that will have us all saying WOW. To be presented as desired on a stand or presentation board (not a plate).
13 -12- Class 15: ROYAL DECORATED COOKIES A minimum of 12 royal decorated vintage cookies presented as desired. Must incorporate flood work and piped lacework. To be presented as desired on a stand or presentation board (not a plate). Class 16: PRETTY PETALS AND PASTELS A tiered celebration cake (any occasion). Decoration to be indicative of the occasion. Minimum 2 tiers. Incorporate a variety of modern, elegant edible finishes. It must be fresh, innovative and creative in style. To be presented on a stand or presentation board of your choice. Dummies are permitted. Class 17: ARCHITECTURE - AN ICONIC AUSTRALIAN STRUCTURE. Create an Australian building or structure using pastillage. There is NO SIZE LIMIT!. If you are planning to go big, let us know the size and we will design the space for it. Size is the competitor s choice; however your entry must include a base board. Dummies are permitted. Class 18: Enchanted Forest This highly imaginative, creative display should be designed to captivate the heart of our inner child. Your challenge is to capture the magical spirit of an enchanted forest. We want you to think mystical and to capture the spirit of magic, so there are NO LIMITS. Create something so special attendees will stop, stare, be inquisitive and keep returning to visit your exhibit. Must be presented on a base board. Class 19: GEOMETRIC AND ABSTRACT This 2 or more-tier cake must be something truly outside the square. Test those boundaries, think different and produce something both amazing and inspiring. It can be presented on a presentation board or stand of your choice. Class 20: BUTTERCREAM Create a buttercream cake of one or more tiers, incorporating a variety of buttercream flowers and foliage. We are looking for a wide variety of buttercream techniques. You can use traditional
14 -13- buttercream or Korean Bean Paste. You must incorporate a minimum of four different flowers. Dummies are permitted. Must be presented on a board or stand of your choice. Class 21: GRAVITY DEFYING This category is for those who thrive on challenge! Create a gravity defying cake of your choice. However, there is a twist! This competition piece is designed for those who love making the impossible, possible. The challenge is. not only must it be gravity defying, it must be animated (move in some way, at the very least it must rotate) If you are looking for a way to blow our minds, this is it! Power will be supplied if needed. Dummies are permitted. Class 22: PROFESSIONAL CLASS Open to anyone who is at professional or masters level. To enter you must be a previous show champion (any show), professional cake artist, professional baker or pastry chef working in an event venue, restaurant, bakery, hotel or a commercial cake decorating business. You may enter as an individual or team consisting of 2-4 people. Judges and stewards are also able to enter this class. In this class you must build a statement cake of your choice the only stipulation is the height limit. It must be a minimum of 1 metre tall, after this there are no height or size limits. The use of dummies is permitted. The sky is the limit, so go wild! This category will be judged by the public, it will not be judged by the Judges. If you need to assemble your entry onsite, time will be allowed within the delivery times stipulated.
15 -14- Class 23 COLLAB AUSTRALIA A Global Online Collaboration (with show option) One Sweet Step at a Time What does this mean to you? The modern human race has evolved from vastly different countries. We have diversely different histories, heritage, religions, societies, languages, foods, lifestyle and beliefs. Our backgrounds have inspired artists, poets, authors, and song composers, movie makers and theatre producers, the Arts, playwrights and dance performers through to intrepid travelers and explorers wanting to uncover the mysteries hidden since the beginning of time. Inspiration created through our differences, extends even further back in history to a point where there was no documentation only marks and hieroglyphics scratched into rocks depicting mysteries and special stories. Here on Earth we share the same issues, climate and vast environmental change, concerns and natural disasters, humanity and compassion for mankind. Across the world, we have seen how a disaster brings out the very best in human nature. We have all suffered directly or indirectly from the wars and atrocities of our forefathers, and yet we re still here persevering in this new age of technology and breakthroughs, which at one point in time were considered sci fi. There have been so many changes in which we as humans have had to adapt. Yet, do we have what it takes to preserve our Earth from the direction mankind has taken it? We as Cake Artists share the same amazing creative pursuit the drive to create. Now and then a great chance like this
16 -15- comes along to tell amazing stories through our work. We have a genuine ability touch people and provoke thought and change, through our great Art. ACADA has decided this year, to let you tell the entire world your version of your own story. Let our wonderful 2018 Collab Australia be your chance to speak through your art, tell us (the world) your hopes and your fears for our future here on Earth, interpret this theme to your best ability. We believe this is a brilliant theme as it lets you create from the very best starting point from your heart! Create something that will help to unite the world. If we each create one piece, and once the competition has finished, share them widely, who knows we may be able to change the world and unite humanity, One Sweet Step at a Time Collab Australia Guidelines: Individuals or teams of 2-4 people can participate. This Collaboration is open globally to all cake artists. This is an ONLINE Collaboration, however there is an additional prize for the best Collaboration piece exhibited live at the show in Brisbane (please read prizes above). Once you have entered, and paid your entrance fee online you will be redirected to the private Collab Australia Face Book Group page, where you will join and get to know many of the world s most amazing cake artists. Once within this group, our Collab Australia master mind Shayne Greenman will mentor and guide you.
17 -16- ADDITIONAL NOTES: Delivery of Exhibits: All exhibitors/competitors must register at the Stewards desk upon arrival when dropping off their exhibits at the show. You will be allocated a place within the competition area to set your exhibit up. Photos will be taken of you with your exhibit upon arrival and of your exhibit once it is set up on the competition table. If it is deemed your cake does not meet the rule guidelines within the category you have entered, the stewards may move it to another class to avoid disqualification and so you can still compete. This will only be done if essential. Utmost care will be taken with any cakes that need to be relocated. Photos will be retaken of any cakes that are moved, once placed in their new location. Travelling boxes and all packaging materials must be removed from the exhibition area after the cake is set up. They cannot be left under competition tables or at the show. Security: Guard rails will surround all exhibits to protect your cake from the public. Stewards will also be monitoring the exhibition area at all times. Whilst we will take all possible care to ensure your exhibit remains safe during the show, the organisers take no responsibility for any loss or damage to exhibits, equipment or personal effects. Intellectual Property: By entering and exhibiting your competition piece at International Cake Show Australia photographs may be taken by the media, fellow competitors and visitors. By entering you agree not to hold ACADA, International Cake Show Australia or any of our volunteers or employees responsible in the event your designs are copied or reproduced.
18 -17- Photographs: By entering the competition, you understand that photographs of competition work may be used online, in the media or printed in publications and/or magazines. Judges Feedback: You will be provided with written feedback from the judges which will be included on your scorecard for each competition piece you enter. The Judge s decision is final. There will be no additional feedback once the show is closed. Score Criteria: When scoring your work, the judges use many criteria. These include but are not limited to: 1. Creativity and innovation (originality of work and uniqueness of design) 2. Workmanship, skills and detail. 3. Design, colour, proportion and balance 4. Level of difficulty 5. Presentation and visual appeal 6. Compliance with the competition specifications 1 st, 2 nd and 3 rd Prizes will be awarded for each class category. All results are then classified based on the scores achieved, to determine who will receive Gold, Silver and Bronze Encouragement Certificates. These are encouragement awards and recognition of the standard of work you have achieved. Prize Presentation: Prize presentations will be held on Main Stage at approximately 2.30pm on Sunday. In the event you are unable to collect your prize during the stage presentation, it will be available for collection with your cake, from 4pm-5pm on Sunday 20 th May, 2018 from the Competition area within the Exhibition Building.
19 -18- Entry Fee Receipts: If you pay your competition entrance fee online, you will automatically be provided a link, to click to receive your official receipt. To enter the competition and to pay your entry fee visit www. Entries paid via mail will not receive a receipt unless they include a self-addressed, stamped envelope when submitting their competition entry. 22 ACADA International ACADA Cake Show Australia 2018 Competition Schedule 2018 Judges Information Sheet 2018 Competition Schedule Complete one Judge s Information Sheet for each entry Completed sheet is to be delivered with your cake to the competition A judge s information sheet provides the judges with information about how your cake was constructed, the level of difficulty in making the cake, if you cake complies with the competition rules etc. Providing comprehensive information is to your advantage. For example, if you have used commercial moulds the level of difficulty would not be determined as high. However, the level of difficulty would be increased if you have hand-formed shapes over-piped them. A judge may not visually be able to determine if you have hand-formed shapes and/or over-piped them. The judge s information sheet would explain this Examples of what else you should explain: 1. Explain any special motivation or name 2. Type and use of supports. 3. Clarify use of any items which may appear not to comply with rules. 4. Any unique technique or procedure used. 5. Advise of the use of moulds purchased or self-made. 6. Name flowers or say if they are Fantasy. 7. To how flowers have been attached or inserted into your exhibit 8. Types of mediums used for example; modelling chocolate, fondant, buttercream, unbreakable gel, cake lace 9.
