2 2015 Clark County Association for Home & Community Education Scholarship Dairy Bar Workers Make this Possible for the Education of our Youth! Sign up to Volunteer! HCE Scholarships Available Three $500 scholarships are being offered to college or technical school students, originally from Clark County or currently living in Clark County. The students applying for the scholarship must be in the process of, or have completed at least one year of higher education beyond high school, and must have 24 credits by June. According to HCE Scholarship Chairperson Marie Kaiser funds for the scholarships are made available through the Dairy Bar sales at the Clark County Fair. Applications are available from the UW-Extension Office; 517 Court Street, Room 104; Neillsville, WI , or by calling The application deadline is June 12, 2015 The Heart OF IS you!!! 3 HCE Day called a Success for 2015 The Heart of HCE was shared with all on Saturday, April 11th in Greenwood at the High School. HCE members, along with guests and presenters, gathered to enjoy a morning of learning, crafts, sharing of member talents presenting their artwork to be judged, and delicious food. A Special Thank-you to all participants and attendees. Award Winners were Marie Kieser, of Neillsville, WI was recognized for 50 years of membership. Betty Loos, of Loyal, WI. Bev Sillampi, of Owen, WI.. OLDER YOUTH/ PARENT VOLUNTEERS NEEDED CLARK COUNTY FAIR Again, the HCE Dairy Bar at the Clark County Fair could use some extra help! HCE stands for Home and Community Education, which many of you might know better as Extension Homemakers. Maybe you have a Mom, Grandmother, or Aunt who belong or previously belonged to this organization. Our main goal of earning money at the Dairy Bar is to award THREE $ scholarships to three Clark County residents who are attending a college or technical school. After one year of education beyond high school, all Clark County residents are invited to apply. The applications can be obtained at the Extension Office. The Dairy Bar is open during the Clark County Fair, Thursday August 6th through Sunday August 9th, and it takes many people to help with all the customers. Also if you have a friend that you'd like to bring along to work on your shift, even if not a 4-H member, they are welcome to sign up! Our HCE Dairy Bar is connected with the 4-H Food Stand. Last year we had many fantastic young volunteers come in and help. Either they were making hand dipped cones or scooping the ice cream into ice cream buckets for the use of making Malts and Shakes which are so popular. That was a life saver when we had orders of 5-6 Malts at a time. We couldn't do it without your help! Why would you like to come help us??? Besides all of us HCE Members loving to work with the youth and meeting our fantastic volunteers, we do let you have your choice of an ice cream treat before you leave - It could be one of our Double ice cream cones, a float or a malt or shake! Also if you do decide to apply for our HCE Scholarship, we'll give you extra points when adding up the score of who will receive the scholarship for their Fall tuition. Also 4-H parents or grandparents, we'd love to offer this invitation to you also! Everyone will get a free pass to get into the Fair the day you volunteer if you don't already have a season pass. I always compare being a member of HCE to my growing up in 4-H. I'd love to share with you what HCE is all about and invite you to join one of our clubs. Why should the kids have all the Fun??? We have a State Conference which is very enjoyable and very educational. Remember 4-H Camp? Well - HCE has many opportunities to continue learning too at any age! 4 HCE Day Comfort Foods Recipes Over the Top Bread Pudding 3eggs 4 cups heavy whipping cream or combo of that and half and half 2 cups sugar 3 tsp. vanilla 2 cups of frozen or fresh blueberries (may use raspberries or cranberries) turns out the same 1 package (12oz) white chocolate chips 1-1# loaf of French bread In a large bowl combine and beat the eggs, sugar, cream and vanilla. Stir in the chips. Tear up the bread into cubes and stir in. Let stand to soak up for 15 minutes. Sprinkle the blueberries in and try not to stir too much. Pour mixture into a 9X13 greased pan. Bake in oven at 350, uncovered for 50 minutes. Let stand for 5 minutes and serve with sauce. Sauce 1 package (6oz) white chocolate chips 1 cup of whipping cream In saucepan, put the cream over low heat. Heat until it comes to a boil, put the chips in a small bowl. Pour cream over and stir until smooth and melted spoon over the pudding for each serving Orange Zest Butter Sauce 1 cup sugar 1/2 cup butter 1 cup of light cream 2 T. Cornstarch Cook and stir over medium heat until partly thickened, stir in 2 T. of orange juice and 2 T of orange zest cook until thickened. Remove and serve over pudding for each serving. White Turkey Chili Makes a big batch 1/2 cup of diced onion sauté them first 4 cups of cubed turkey 2 cans of northern or white kidney beans 2 (4oz) cans of green chilies 2 cans of chicken broth 1-16oz container of sour cream 2 cans of cream of chicken soup 1/2 cup of milk 1/4 tsp cumin 1/4 tsp oregano 1 tsp of garlic powder 1/4 cup of wine (may use or not use) May use a small amount of Red Pepper if desired In a large pot combine all of the ingredients, bring to a boil, stirring often reduce heat, simmer for 25 minutes. Remove from heat and serve Page 4
5 Veggie Chopped Salad 3 cups of finely chopped broccoli 3 cups of finely chopped cauliflower 3cups of finely chopped celery 2 cups of frozen peas (about 8 Ounces), thawed 6 bacon strips cooked and crumbled 1 1/3 cups of mayonnaise 1/4 cup sugar 2 Tbsp grated Parmesan cheese 1 Tbsp cider vinegar 1/4 tsp. salt 3/4 cup salted peanuts In a small bowl combine the first five ingredients. In a small bowl, mix mayonnaise, sugar, cheese, vinegar, and salt until blended. Add to salad and toss to coat. Stir in Peanuts just before serving. Refrigerate leftovers. 6 Club News Lone Pine March 18, 2015-Roll call what is your favorite fast food?. Leadership project lesson ADRC was given by Rosemary Sloniker. Lots of good discussion was help over this. Rosemary also gave a report on Breathing & What a good deep breath can do for you. Margaret Artz gave a report on the History of the Pledge of Allegiance. Marie Kaiser made us aware of the water testing taking place in Clark County, and how much water we should consume for a healthy lifestyle. Violet Roth gave a report on cleaning out medicine cabinets and what to do with outdated medicines. Next meeting April 15th at Mary Olson's. Hilltop March 24, 2015 Items for the HCE Day collections were brought in. Roll call was done with each member asking another member a question about themselves. This provided an opportunity for each member to get to know each other better, especially the new members. Seats are still open for the Chanhassen Theater on June 10th, to see Mary Poppins. HCE registrations are due march 27th. Cindy is driving reminders to everyone to fill out their cultural arts forms, and collected extra forms for members. On March 19th 5 of us helped to make tote bags for State conference, Cindy, Laurie, Arlene, Barb and Mary. Audrey gave a report on Safe drinking water, and the Education program being offered by Clark County. Cindy gave a report on Drones coming to an area near you. Discussion regarding privacy concerns, and the technology. April meeting will be at Mary Nautrz, Monday April 20, 7:00pm. Merry Homemakers-March 26, 2015 Meeting was at Norski Nook in Osseo. Reminder of HCE Day and bringing muffins and quick breads. Reminders given for the collection items for Ronald Mc Donald house & Hope Lodge. Group went to see Joseph and the Amazing Technicolor Dream Coat at the Osseo/Fairchild High School. It was enjoyed by all. Owen Happy-April 9th Sally Weiler was our hostess and served a delicious dessert called Apple Betty. Both the sunshine fund and the treasury showed a little money available for use. Bev gave a report on doing exercises for balance to help prevent falls. Judy brought Rural Safety Day cookies, and Fern will take to the Courthouse. Sandy attended the West District Meeting. Summer plans were discussed and it was decided to tour the Down to Earth Nursery in Eau Claire, in June. Do the fishing in July, and to do the folded butterflies in August. We decided not to sigh up for the Dairy Bar till closer to that date. Mary Lou Kirchner will be at the next meeting, Wednesday, may 6th at 12:30 to show how to make the folded paper flowers and we will have a potluck lunch. Pat Blazer won the ice guess on the Millpond and donated the money back to the club, Thanks Pat! Happy Birthday was sung to Norma. Her special day was April 5th.The May 21st square foot gardening class in loyal will be attended by Pat and Judy. Sandy gave us the 101 ways to use a Mason Jar we shared our ideas. Happy Spring and Happy cleanup for flowerbeds. Live'N Learn. April 16,2015-Joan Knack presented the project on the Aging and Disability Resource Center of Clark Co. which provides services are for persons who are aged or disabled. More information is available by contacting the ADRC at the Courthouse in Neillsville. Barb Kingsbury reviewed an article from the READER'S DIGEST, entitled: "Tricks to Prevent Spring Allergies." Keep in good health by eating right, losing extra pounds, and avoiding stress. Suggestions made to compliment Allergy Medicines include: change filters regularly on furnaces and air conditioners; keep the home at the correct humidity level; change front door mats to synthetic floor mats and wash weekly; remove shoes when entering the home; spring clean and wash drapes, and bedding, using 130 degree water; keep things off the floor. Store clothes in zipper locked bags; wash hair before going to bed; and keep pets out of the bedroom. : Earth Day is April 22 and Arbor Day is April 24. Patty Rinka reported on important dates for April. She also gave a report on an article from the April 16th issue of the MARSHFIELD NEWS HERALD entitled "Many Millennials Have Never Had Credit Cards." According to Credit -Cards.com, 36% of Americans between the ages of 18 to 29 have never had a credit card. The next meeting will be held at the home of Mary Kipp on May 7. Town & Country, March 16, Received a Thank-you from our Donation to the Bookworm Project. GCE Day registrations were completed June offered to purchase Rural Safety day cookies: club to reimburse. Reminder for the On the Move and In the Groove. West district meeting was discussed. We will be sewing goody bags for State convention for next year. 8 Submitted by Joanne Trunkel CC HCE EXECUTIVE BOARD MEETING Meeting was called to order at 6:00 p.m. by President Joan Knack at the ADS in Greenwood. Members present were: President-Joan Knack; Vice-President and Tour Committee Joanne Trunkel; Treasurer-Lois Becker; Historian-Betty Loos; Secretary-Mary Kipp; Scholarship Committee- Marie Kaiser; Cultural Arts Committee -Donna Koski; FLA/HCE Advisor-Nancy Vance. The Secretary's report was read, approved and placed on file. The Treasurer's report was read, approved and placed on file. SCHOLARSHIP COMMITTEE: Marie Kaiser reviewed the recommendations by the Scholarship Committee for changes in the point system for HCE Scholarships for Students. Lois Becker made a motion to approve the new guidelines. Joanne Trunkel seconded the motion. Motion was approved. DIRECTOR'S REPORT: Joanne Trunkel reported that Tote Bags will be made on March 19 for the State Conference. Those interested will meet at the Loyal City Hall between 9:00 a.m. - 1:00 p.m. to make the bags. Anyone interested in helping is invited to attend. HCE DAY: Will be held on April 11 at the Greenwood High School. Donna Koski, Cultural Arts Committee, reported that she is in the process of obtaining judges for the day. The list of needed items for Hope Lodge and the Ronald McDonald House are in the Newsletter. Betty Loos-Historian, reported that there was an article in the Newsletter asking 50 and 60 year members to contact her so they can be recognized on HCE Day. WEST DISTRICT MEETING: Will be held on April 6 at Trinity Lutheran Church in Loyal. The ladies from the Church will provide the lunch. The registration fee for Clark Co. members will be covered by HCE at no expense to the person attending. HCE Advisor Report: Nancy Vance reported that the Leadership Training entitled "Food Safety for Older Adults" was well attended. The Tea at the Tufts was also successful. The next Leadership Training Session is "ADRC-Who and What is it and How can it Help?" It will be held on March 10 at the Loyal City Hall.
