1 February & March 2017 Newsletter 4-H Project Deadlines May 15th: Exhibit Hall 4-H Project Enrollment Deadline April 1st: Livestock Enrollment Deadline Indiana 4-H Mission: The Indiana 4-H Youth Development mission is to provide real-life educational opportunities that develop young people who will have a positive impact in their communities and the world. 2 Healthier Eating: Here Are Two Programs For You! Are you considering making changes to how you eat? Maybe you want to eat better but are not quite sure what that means or how to do it. Perhaps a recent visit with your doctor included a discussion on how dietary improvements and moving your body more could help you with a particular health concern. Whether you are facing a current health issue or just want to eat better for disease prevention, check out the 2 upcoming programs presented to you by Purdue Extension Health and Human Sciences Educators. Be Heart Smart hosted by Memorial Hospital at Jasper Engines and presented by Gail Peitzmeier and Annette Lawler, Purdue Extension Mondays, February 13 and 27 th Location: Jasper Engines, Carefree 5:00 PM Meal provided by Memorial Hospital Program: Be Heart Smart at 5:30 PM Cost: Meal and Program are free Call: to register by February 8 th Dining with Diabetes by Gail Peitzmeier & Annette Lawler, Purdue Extension Tuesdays, March 7, 14, 21, and 28 Location: Harrison County Extension Office in Corydon in the lower level (Casada Kitchen) Time: 5-7 PM The program is for individuals with diabetes and folks who just want to enjoy good food. Come to learn, cook, and eat! Opportunity for hands-on meal preparation. Cost: $35.00 per person Call: to register by February 27th

4 Do you have type 2 Diabetes? Would you like to learn more about your disease and how to reduce your health risks? If so, Purdue Extension, in partnership with Harrison County Hospital, has a great program for you! Purdue Extension of Crawford and Harrison Counties will be offering Dining With Diabetes, a weekly session program beginning March 7 from 5:00 to 7:00pm at the Harrison County Extension Office. The series of four weekly sessions are open to those with diabetes, their family members and caretakers. Cost for the program, which is partially subsidized by the Harrison County Hospital, is only $35 per person for the series of four sessions, with a follow-up session at a later date. Pre-registration and payment is required. Participants are encouraged to attend all class sessions. The Dining With Diabetes program will help adults with type 2 diabetes control their blood sugar to feel better and reduce the risk of health complications. You will learn to prepare meals that are healthy, easy to fix, and taste great. The program fee includes educational classes, program materials, and meals prepared during the classes. 5 Pork and Vegetable Stir Fry Fast and Healthy The sauce ¼ cup Thai sweet chili sauce ¼ cup hoisin sauce 3 tablespoons light soy sauce 1 tablespoon Sriracha optional as it is spicy 2 tablespoons minced garlic (about 4 cloves or minced from the jar) 1 tablespoon minced fresh ginger The Protein pounds Pork loin, about 4 boneless chops sliced thin. 2 Tablespoons canola oil Heat oil in a Dutch oven or large wok. Add the pork loin slices and cook thoroughly. Add sauce and simmer meat as it continues to cook. The Vegetables 1, 12oz. bag frozen stir-fry vegetables (do not cook, add frozen to the pan and cook with meat and sauce) May also add to this dish other vegetables such as sliced and drained canned water chestnuts, broccoli, or sugar snap peas. Another option is to add 1 bag of shredded cabbage with carrots (coleslaw mix). Amount of sauce may need to be adjusted if more vegetables are used. Serve with brown rice.
