KATE SABELHAUS, FRESHMAN, ARMSTRONG HALL I really enjoy living on campus! There are so many opportunities to make friends in my residence building and I think that's important, especially as a new student here. With this being the first year without my mom s cooking, I especially appreciate everything that the dining halls have to offer. Living on campus also makes me feel a lot closer to the student community, and I find it easy to get home from all of my classes! HOME FOR BREAK Is your student coming home for Winter Break? Remind them to complete this checklist before leaving their residence hall! 1. Be green and unplug all electronics and outlets. 2. Unplug your fridge, leave the door open so it can properly ventilate and throw out any unwanted food items that might spoil. 3. Take out all trash and recyclables. Be sure to use your MSU recycling mesh tote bag! 4. Bring home your dirty laundry.. Say bye to your neighborhood friends and wish them a happy Winter Break! TANNER RUPPERT, JUNIOR, OWEN HALL Living on campus is great because classes are right at your fingertips, and having a meal plan is clutch. Plus living on is great for meeting new friends and for going to on campus events. CALENDAR OF EVENTS PARIS HARPER, SENIOR, SNYDER HALL I like living on campus because I like being close to all my classes and I m always on campus anyway for meetings, work and club organizations, so it saves me a lot of time when I m close to all of the buildings I need to be in all the time. Where I live is really convenient because my floor is really quiet and the dining hall is open until midnight. 4 EATING AT STATE: RECIPE TO TRY AT HOME Try out the following recipe from MSU s South Neighborhood s Executive Chef Kurt Kwiatkowski, perfect for holiday celebrations and gatherings of family and friends. SNAPSHOT: OUTREACH CAMPUS TOUR GUIDE BEN LABADIE Ben Labadie is a senior, graduating in May. He is studying supply chain management within the Broad Business College at MSU and has worked with the Division of Residence Education and Housing Services for four years. During his first three years, Ben worked as an East Neighborhood facilities supervisor in Akers Hall. This past May, he changed positions and joined Outreach as a campus tour guide. As a tour guide, Ben is responsible for giving walking tours of campus to high school juniors, seniors and their families. He also provides tours for transfer students, donors and other guests of the university. Turkey Brine Solution 1 gallon of water ½ c. honey 1½ c. kosher salt (if you are using regular salt only use about ¾ of a cup) 2 qt. vegetable of chicken stock ¼ c. whole black peppercorns 12 bay leaves ½ bunch of fresh thyme ½ bunch of fresh Italian parsley 3 lemons cut in half Put all ingredients into a soup pot and bring up to a boil. Shut off and let cool to room temperature or colder. This can be made up to three days in advance. Put your turkey in a brining bag or a five gallon bucket and pour the liquid over the bird, making sure the bird stays submerged in the liquid. Let the turkey brine for a minimum of six hours, up to 14 hours. Remove the turkey from the solution, rinse with cold water and pat dry with paper towel. Turkey Gravy 8 cups turkey stock (chicken broth and pan drippings combined) 1 stick unsalted butter ¾ c. flour Salt and pepper to taste 1 T. apple cider vinegar Pour pan juices through a fine-mesh strainer into measuring cup (do not clean roasting pan), then skim off and discard fat. Put the roasting pan across two burners, then add one cup chicken broth and deglaze roasting pan by boiling over high heat, stirring and scraping up brown bits, for one minute. Remove from the stove and pour through a strainer into the measuring cup containing pan juices. Add enough chicken broth to pan juices to bring total to eight cups and reserve. Melt butter in a four-quart heavy sauce pot over medium heat then stir in flour. Cook over moderate heat, whisking, for five to seven minutes or until the mixture has a bit of a nutty aroma. Add your reserved stock mixture in a stream, whisking constantly to prevent lumps, then bring to a boil, whisking occasionally. Season gravy with salt and pepper, then stir in cider vinegar. Aromatics for the Turkey 1 apple cut in ¼ s ½ of an onion large dice 2 stalks of celery large dice 2 carrots large diced 1 cinnamon stick 1 c. of chicken broth ½ bunch of thyme ½ bunch of Italian parsley Take all ingredients and mix together. Pour the solution into the turkey cavity while it is the roasting pan. Some of this can and will come out and sit in the pan. Cooking the Turkey 2 T. canola oil for rubbing the turkey down 1 t. black pepper ¾ lb your favorite bacon Preheat the oven to 32 degrees. Rub the oil over the turkey, season with pepper and lay strips of bacon on the white meat areas of the turkey (you may need to put toothpicks to hold the bacon in place). Put the turkey in the oven for one and a half hours. Remove briefly to put a piece of parchment paper and lightly wrap with tin foil. Baste the turkey with the liquid that is in the pan. Back into the oven for an additional two and a half to three hours, or until the temperature of the thigh / dark meat is at 16 degrees. When the turkey is done, transfer it to a carving board and let it rest about 20 to 2 minutes before carving it up. Remove bacon strips and any toothpicks that you had holding the bacon in place. Serve up the crispy bacon on the side with the turkey. Most days during the school year, guests come to campus for admissions presentations and campus tours, he explains. Our tours begin in the union building. From there we head to Spartan stadium, then to Wells Hall to see a classroom. Following Wells, I take guests to the rock, Snyder / Phillips, the Broad Art Museum and end back at the MSU Union. These tours really focus on what it s like to be a student and what it means to be a part of the MSU community. I try to stress the family atmosphere that exists at MSU, and I want prospective students to know that they can be a part of our Green and White community. After graduation, Ben hopes to work a full-time role in supply chain sourcing in Chicago. Last year, he decided to forego his spring semester to work for Johnson & Johnson s Neutrogena brand in Los Angeles. He says his main responsibility was managing chemical and packaged goods suppliers, enforcing delivery deadlines and ensuring high quality materials were being brought in. Outside of work, Ben is an avid sports fan. He s been a fouryear season ticket holder for both MSU football and basketball and says he loves following the team to their different games. He has had opportunities to travel to games at the Rose Bowl, Cotton Bowl and Final Four among others. He became an Izzone section leader his sophomore year and has been arriving to every home basketball game three hours early to help set up all the bags and student newsletters. In addition, he helps swipe IDs and wristbands during games and leads chants from front row. He has helped run the Izzone campout every year and says he will miss the annual event after graduation. Ben says his favorite aspect of working for RHS is interacting with students who are in the midst of their college decision process. I get to serve as the face of MSU and show guests how great our university is. " I want prospective students to know that they can be a part of our Green and White community." Students who attended Ben s tours as much as four years ago still come up to him today and remember his name and face as the one who introduced them to MSU s incredible campus. Looks like more than just the Division of Residential Hospitality Services will miss his presence. WORKING ON CAMPUS If your student would like to work on campus, let them know that the Division of Residential and Hospitality Service (RHS) offers a variety of student positions located across campus. RHS offers flexible work schedules that accommodate classes and activities and offer competitive pay with regular increases, promotional opportunities and discounted meals in the dining halls. Students can find more information and apply online by visiting jobs.rhs.msu.edu. 6 7
