I m sked constntly bout how to improve joint stiffness, joint soreness, or joint chiness. There re mny things tht cn be done t home to help improve joint flexibility, reduce pin, nd to prevent future joint problems. Het is often used to decrese muscle tension nd stiffness in joints. This cn include het in one re or being submerged in hot shower or hot bth. Stretching on dily bsis is lso extremely importnt. Topics for the Ombudsmn Conference sessions were Gurdinship sttutes nd issues, how nursing homes work with hospice progrms, the residents right to vote nd prticipte in the politicl process, mentl helth nd communiction, dispute resolution, nd intimcy nd sexulity mong residents with dementi in long term cre. The Aging Mtters Ombudsmn Progrm hd 19 Ombudsmn Volunteers ttend the conference. Mny of those ttending nd severl tht could not ttend were recognized nd presented wrds for their yers of service to the Ombudsmn Progrm by the Stte Ombudsmn Office. For most of us tht mens fmily gtherings, prties, celebrtions nd lots nd lots of food! Most of us prepre food either to be eten in our home with fmily nd friends or mybe to be tken to nother loction nd shred. No mtter if you re n experienced cook or just trying your hnd t holidy dishes, there re steps to tke to keep food sfe nd to help prevent foodborne illness (FBI). Plnning hed cn be big help in ensuring successful nd sfe mel. You cn strt by clering your refrigertor so you hve room for the dishes you re prepring. Strt using the foods tht re tking up spce nd mke sure you hve plenty of room for your turkey, hm, rost nd other dishes. You my wnt to buy n inexpensive thermometer to keep in your refrigertor to mke sure the temperture is 40oF or lower. Once you ve plnned your menu nd gthered your recipes, it s time to go shop- ping. Grocery shopping is where sfe food hndling should strt. You should keep rw met, poultry, nd sefood seprte from other foods in your crt. The gol is to keep the met juices tht my contin bcteri wy from other items in your shopping crt. Ask the cshier to plce your rw met, poultry, nd sefood items in seprte bg; gin we re trying to keep ny juices wy from redy-to-et foods. Alwys buy cold foods (put them in your crt) lst. We wnt to keep them s cold s possible for s long s possible. They will strt to wrm if you crry them in your crt while you shop for other items. If you live considerble distnce from the grocery store, you my wnt to hve cooler or insulted bg with ice for the trip home. When you rrive home, you should put your cold nd frozen items into the refrigertor or freezer immeditely. Remember wrm ir rises, so the bottom shelf of your refrigertor is the coldest. Tht rw met, poultry, nd sefood should go on the bottom shelf of the refrigertor on plte or try so it cn t drip on other foods. As you prepre your food, lwys strt with clen counters, utensils nd equipment, nd thoroughly wsh your hnds with wrm wter nd sop. Prepre uncooked recipes before recipes using rw met to reduce cross-contmintion. Use seprte cutting bords for rw met nd redy-to-et items like vegetbles or bred. Use met thermometer to check the internl tempertures of dishes to ensure they re fully cooked nd sfe to et. Fresh beef, pork, vel, nd lmb should be cooked to 145oF with 3 minute rest time; fish should be cooked to 145oF; ground beef, vel, pork nd lmb should be cooked to 160oF; egg dishes should be cooked to 160oF; nd ll poultry should be cooked to 165oF. When prepring to serve be sure to keep hot foods hot t 140oF or bove nd cold foods cold t 40oF or below. Chfing dishes, crock pots, or ice trys cn help with this. Foods should not be sitting out for more thn 2 hours. If this hppens they should be discrded. For most Americns, eting leftovers from holidy mel or prty is s trditionl s the mel itself. In order to enjoy leftovers sfely, lwys rehet leftover foods to n internl temperture of 165oF. If tking leftovers for lunch, pck perishble food in n insulted bg with n ice pck to mke sure it stys chilled. Honey Rosted Sweet Pottoes (recipe dpted from Eting Well.com) Ingredients 2 ½ lbs. sweet pottoes, peeled nd cut into 1 ½ pieces (bout 8 cups) 1/3 cup honey (or pure mple syrup) 2 Tbsp butter, melted Guilt-Free Green Ben Csserole (recipe dpted from Better Homes nd Grdens) Ingredients: 2 cns of no slt dded cut green bens (14.5 oz cns, drined) 2 tespoons Country Crock Vegetble Oil Spred (melted) 1 cn of reduced-sodium crem of mushroom soup (10.5 oz cn) 1 Tbsp lemon juice ½ tsp slt Blck pepper to tste ½ cup tosted pecn pieces, optionl 1/3 cup chopped onion 3 Tblespoons bred crumbs 1/8 tespoon blck pepper ¼ cup plin ft-free yogurt Directions: 1. Prehet oven to 400o. 2. Arrnge sweet pottoes in n even lyer in 9 x13 glss bking dish. Combine honey, butter, lemon juice, slt nd pepper in smll bowl. Pour the mixture over the sweet pottoes; toss to cot. 3. Cover nd bke the sweet pottoes for 15 minutes. Uncover, stir every 15 minutes, until tender nd strting to brown, 45 to 50 minutes more. If using pecns, stir into csserole during the finl 15 minutes of bke time. Mke hed tip: Cover nd refrigerte for up to 1 dy. Just before serving, rehet t 350o until hot, bout 15 minutes. Directions: 1. Prehet oven to 350o. 2. In smll sucepn, cook the chopped onions in the mrgrine until onions re tender. Stir in the bred crumbs nd set side. 3. In lrge mixing bowl, stir together the crem of mushroom soup, yogurt, pepper, nd green bens. 4. Trnsfer the mixture to 1 qurt csserole dish. 5. Sprinkle the onion-bred crumb mixture on top of the csserole mixture. 6. Bke the csserole t 350o for 25 to 30 minutes or until the mixture is heted through nd the crumbs re golden. (*Mkes 6 servings, pproximtely ¾ cup per serving) Quino Stuffing Ingredients: 1 butternut sqush, peeled, seeded, nd cubed 1 red onion, peeled nd diced 3-5 cloves grlic, with peel still on 1 Tbsp. vegetble or cnol oil Slt & Pepper to tste 1 ½ cups uncooked quino, rinsed 3 cups chicken broth, vegetble broth, or wter Zest of one ornge 2 cups roughly chopped spinch 2/3 cup dried crnberries ½ cup shelled pistchios Directions: 1. Prehet oven to 425o. Line bking sheet with luminum foil. 2. In lrge mixing bowl, toss butternut sqush, onion, nd grlic cloves (with peel still on) until they re evenly coted with oil. Spred out in n even lyer on the prepred bking sheet. Seson with slt nd pepper. Rost for 30 minutes, or until soft nd cooked nd edges begin to slightly brown. Remove nd set side. Discrd grlic peels. 3. Menwhile, stir together quino, broth (or wter), nd ornge zest, nd cook ccording to pckge instructions. When cooked, set side. 4. Add cooked veggies, quino, spinch, crnberries nd pistchios to lrge mixing bowl, nd gently toss to combine. Seson with dditionl slt nd pepper if needed. Serve wrm. ( Mkes 4-6 Servings)

In mny cses one fmily member seems to crry most of the cregiver duties. Tht primry cregiver my experience resentment towrd other fmily members who they feel don t offer enough ssistnce. Insted of llowing the holidy seson to become overwhelming, cregivers re encourged to try to use it s unique opportunity to seek better communiction, connection, nd support from fmily members nd friends. Fmily members my not lwys be wre of loved ones decline in bility nd needs, or just wht it tkes to cre for them. An updte letter tht could be copied nd included in holidy crds might let others know wht cregiver is deling with nd could offer other fmily members the opportunity to respond with ssistnce. This might lso help combt feelings of isoltion. A cregivers disppointment in fmily members they feel re not pulling their weight my come to hed t this time of yer. The helthiest wy to del with those feelings is to identify them insted of denying them, nd then mke some conscious choices in deling with those feelings. A cregiver my choose to cler the ir before the holidy, or my put the feelings side, but with pln to pproch the sitution fter the holidys. Identifying feelings nd mking pln to del with them cn help the whole fmily enjoy the seson. Cler communictions nd relistic gols go long wy towrds destressing the sitution. Let fmily members know tht your cregiving duties re keeping you very busy nd tht you only hve so much energy for holidy preprtion nd hosting duties. And cregivers my need to dpt their trditions to fit into current circumstnces. For instnce, insted of hving huge mel tht cregiver my trditionlly prepre nd pln, hve potluck nd put other fmily members in chrge of orgnizing, decorting nd clening up. If the fmily is not ble or willing to physiclly help, they my be ble to py for 2 or 3 dys of home cre to llow the cregiver to prepre for n event. Also, quiet room for your loved one my better llow the cregiver to enjoy fmily gthering. People with dementi re often overwhelmed by multiple converstions nd lots of ctivity nd re more likely to ct out or become upset when plced in tht type of setting. The holidys re good time to shre your wish list. A wish list my include items such s: Respite This might be fmily member who will gree to sit with your loved one number of times during the next 3 months, or fmily member who will py for home cre under the sme circumstnces. (Book home cre erly during the holidy seson.) Home Repirs Fmily members tht re not comfortble with hnds-on cre my be perfectly hppy to chnge light bulbs, do lwn cre, or crt pile of junk off. Cregiver Cre gift certifictes for mssge, fcil, mnicure, or other recretionl ctivities re gret wy to relx nd tke cre of the cregiver. Reflecting on the pst by spending time in relxed tmosphere with their cre receiver reminiscing by looking t old photos or unpcking ornments tht my stir fond memories cn hve clming effect on both the cregiver nd the cre receiver. It is lso good time to reflect on the rewrds of cre giving. Remembering tht you re fulfilling vow or living up to personl idel or religious belief to cre for your loved one could be gret boost to selfesteem. Also in tht sme generl ide, in ny chllenging sitution, cregivers experience gret del of personl growth s they lern to meet chllenges in wys they never imgined possible.
