Pistachio-Couscous Salad This quick and healthy dish can be used as a side or a salad. serves 6 2 cups couscous V cup dried apricots, chopped, or golden raisins boiling water 3 carrots, sliced 1 stalk celery, chopped V red pepper, seeded and chopped 4 tablespoons olive oil 2 tablespoons sherry vinegar, or 1 lemon, juiced sea salt to taste cumin to taste curry powder to taste (I get the fresh curry from Pike Place Market) chopped parsley chopped mint leaves 1 cup shelled pistachios Combine couscous and chopped apricots in a heatproof bowl. Pour boiling water over just to cover. Fluff with a fork and add a little more water if necessary. Keep fluffing the couscous periodically as you chop the carrots, celery and red pepper. Moisten the couscous with olive oil and sherry vinegar or lemon juice. Add salt and spices, and stir. Toss in veggies and stir. Blend in parsley and mint to taste. Top with pistachios and serve.
