4 Industry Panel: Tourism Opportunities in Victoria and Beyond CHAIR: Stuart Walsh Associate Director Vocational Education and Training William Angliss Institute Stuart has 35 years of experience as an educator and chef within the private and public sector. As Associate Director VET, Stuart is responsible for the delivery of the range of vocational educational and training programs at William Angliss Institute. Alex Rawson Group Director People and Performance The Lancemore Group Alex is an experienced human resources, talent and organisational development leader with wide reaching international experience. Over the past 20 years, Alex s focus has been on strengthening human resource practices within highly customer-focused organisations including; InterContinental Hotels Group, Mövenpick Hotels & Resorts and the National Australia Bank. Paul Albone Manger Industry Support Tourism Events and Visitor Economy Branch Sector Development and Programs Victoria State Government Paul has over 20 years of experience working within the public and tourism sector. Early positions held by Paul include planning positions with Department of Sustainability and Environments and Parks Victoria. In the role of Manager of Industry Support at Tourism Victoria, Paul s focus is industry crisis preparedness, response and recovery and regional tourism development. This expertise was important during his time as Manager Tourism Recovery for Victorian Bushfire Reconstruction & Recovery Authority. Mark Normoyle Executive Chef RACV Club Mark began his career with the Sheraton Hotel Groups where he was employed as a commis chef at the Uluru Ayers Rock Resort. To further his experience and to refine his skills, Mark went on hold positions as Chef de Partie at the Sheraton Mirage Gold Coast and as Sous Chef at Hotel Sofitel Melbourne. Mark accepted the position as Executive Chef RACV City Club and was instrumental in leading a kitchen team at the opening of RACV 501 Bourke Street facility. She brings a wealth of industry knowledge in events and marketing to her role as a Lecturer at William Angliss Institute. ALUMNI Clare McMennemin Conference Sales Executive Hotel Grand Chancellor After graduating from William Angliss Institute with a Diploma of Events, Clare s career is moving from strength to strength as a conference sales executive at The Hotel Grand Chancellor. During her studies at William Angliss Institute, Clare pursed volunteer work and received a scholarship to attend the 2016 ICCA Congress in Malaysia. 6 Food Science and Technology CHAIR: Bronwyn Graham Food Processing Coordinator William Angliss Institute Bronwyn has had an extensive career as a Food Science and Technology educator and has worked for a number of industry bodies including The Australian Institute of Food Science and Technology. As Food Processing Coordinator, Bronwyn is responsible for the delivery of our Butchery and Food Science and Technology programs. ALUMNI Gerard Domingo Asset Engineer Melbourne Water With a Bachelor of Engineering and 10 years of experience working in a range of industries from food manufacturing, water utilities, chemical, hydro-metallurgical processing and health, Gerard brought an interesting perspective to his studies in the Diploma in Food Science and Technology at William Angliss Institute. Now working at Melbourne Water, he applies this knowledge to his current role. ALUMNI Josh Drury Quality Assurance & New Product Development Australian Blending Company After 19 years of experience as a chef, Josh decided to take his foods career in a different direction and enrolled in William Angliss Institute s Diploma of Food Science and Technology on He was able to gain work experience at the Australian Blending Company and now holds a full time position working within Quality Assurance and New Product Development. 9 Experience the vocational side of Angliss Wine Tasting A wine tasting workshop will be conducted by William Angliss Institute current hospitality students. Wines will be served with a variety of cheeses. Wine list Mount Riley Sauvignon Blanc Mt Duneed Shiraz Richard Stockman fortified wine Food Workshop: Concept to Commercialisation This workshop will explore the process of taking a recipe from the kitchen into mass production to be sold on a supermarket shelf. A taste test will be conducted and participants will compare the difference between a freshly-made dessert, a store-bought dessert and packet-mixed version. 9
