1 School Nutrition Scramble 2016: June 14 15, 2016 The Minnesota Department of Education (MDE) - Food and Nutrition Service (FNS) is excited to offer a School Lunch Scramble 2016 training opportunity on Tuesday, June 14 and Wednesday, June 15, New this year: participants will have three options for attending the Scramble: View the webinar sessions at greater Minnesota Educational Service Cooperative locations. Attend live sessions at MDE in Roseville. View the webinar sessions via any computer (at home, the lake, school, etc.). Participants will be able to select from a variety of school food service related topics. Courses are offered concurrently and repeated on each day so administrative staff, as well as food service staff, can attend. Each course will be available via webinar one time only on either June 14 or 15. The Scramble schedule and session descriptions are provided below. Educational Service Cooperative Locations The following educational service cooperatives will be provide webinar viewing of the School Lunch Scramble sessions so you can view with other local School Nutrition Program providers. Each cooperative has set up their own schedule depending on room availability and is handling registration separately. Check with the educational service cooperative in your area for registration information. This will be a great way to network with other School Nutrition Program providers in your area. 2 Registration for In-person Sessions at MDE in Roseville Registration for Roseville is on a first-come first-served basis. Some of the live sessions at Roseville have registration limits due to room size. This year s registration will allow each participant to register using one link for any session on both days. Only one participant per registration. Registration confirmations will be ed immediately after you register to the address entered on the registration. Accuracy in entering your will ensure you receive the registration confirmation. School Lunch Scramble 2016 Roseville registration. Webinar Sessions No registration is needed for webinar sessions. Two webinar links will be available each day to access the sessions based on the room the sessions are presented in. Refer to the schedule below. The links will be open for the entire day so there will be no need to login to each session individually. However, if you will not be participating in all sessions, you may login and out as needed. 6 Procurement Fundamentals 8:30 a.m. 9:30 a.m., Room CC15 Operations The U.S. Department of Agriculture (USDA) will be emphasizing the procurement process over the next few years by introducing a procurement section to the administrative review. This session is the first part of a two-part series and will provide an overview of procurement methods, thresholds and procedures. Procurement Plans, Tools and Templates 9:45 a.m. 10:45 a.m., Room CC15 Operations This session is a second session of a two-part series and will take a deeper dive into procurement with the introduction of tools and templates for procurement. Exploring USDA Foods Opportunities 11 a.m. 12 p.m., Room CC15 Nutrition Schools have several options to utilizing their USDA Foods entitlement. This session will provide an overview of the five opportunities for using USDA Foods entitlements: Regular USDA Foods, Minnesota Rebate Program, Department of Defense (DoD) Fresh, Net Off Invoice and Fee for Service. Net Off Invoice: A New Model for USDA Foods Entitlements 1 p.m. 2 p.m., Room CC15 Nutrition Net Off Invoice (NOI) is a new Minnesota USDA Foods opportunity for USDA Foods entitlements. With NOI, the value of USDA Foods incorporated in processed foods received is automatically deducted from invoices at the time of delivery. This session will address how to participate in this USDA Foods option. Understanding Your Annual Financial Report 2:15 p.m. 3:15 p.m., Room CC15 Learning Code: 2240 All school nutrition sponsors are required to implement a financial management system that identifies revenues and expenditures. This session will review the Annual Financial Reports for public schools available on the MDE website and how to use the report to get a birds-eye view of the nutrition fund. to 60 participants each day.
7 ICAVES - A Tool for Approving Meal Applications 8:30 a.m. 9:30 a.m., This session will review using the Applications for Educational benefits to certify students for meal benefits based on household income and introduce ICAVES, an Excel spreadsheet that can be used to approve income applications. Avoiding Meal Benefit Issuance Errors 9:45 a.m. 10:45 a.m., Learning Code 3100 Errors in assigning meal benefits to students can impact the financial health of a school meal program. This session will highlight common errors in approving meal applications and direct certification. Partnering to Serve Homeless and Migrant Students 11 a.m. 12 p.m., MDE s homeless and migrant specialist will present basic information regarding identifying homeless and migrant students. Learn how to find the homeless liaison in your district and how to connect with a regional migrant recruiter in your area. CLiCS: New and Improved 1 p.m. 2 p.m., Improvements are being made to make your Cyber-Linked Interactive Child Nutrition System (CLiCS) experience more user friendly. This session will introduce you to the new features in CLiCS and refresh your knowledge about completing annual sponsor and site applications. Personal Wellness and Nutrition for School Nutrition Staff 2:15 p.m. 3:15 p.m., Nutrition Learning Code: 1300 Join Mary Brunner, MS, RD, LD, one of Hy-Vee s dietitians for a discussion on ways to focus on wellness and improve your personal nutrition. Mary will share from her wealth of knowledge from a certificate of training in adult weight management and as a certified personal trainer. Mary works at the Oakdale Hy-Vee location in the metro area. to 30 participants each day. What is a Process Category and Other Food Safety Plan Mysteries? 8:30 a.m. 9:30 a.m.,
8 Operations Learning Code: 2600 The foundation of developing a food safety plan for your facility is understanding menu process categories. This session will unravel the mysteries of process categories and show you how to use these categories to develop a food safety plan. Help for Meeting Professional Standards Training Requirements 9:45 a.m. 10:45 a.m., Learning Code: 3400 Training requirements of the Professional Standards rule are intended to build and strengthen skills for school food service workers. This session will introduce you to resources that will help you receive training to improve your skills and templates that will help track the training you receive. Wellness Works! Implementing the NEW Federal Regulations in Local Wellness Policy 11 a.m. 12 p.m., Participants will become familiar with a new toolkit that MDE will be releasing on updating local wellness policies. In addition, best practices and resources will be shared on how to expand local wellness policies from being owned by food service departments and instead be a shared, living document with a wider network of school stakeholders. A New Look at Fruits and Vegetables 1 p.m. 2 p.m., Communications Marketing Learning Code: 4100 Fruits and vegetables now make up half of the lunch tray. This session will explore ways to optimize quality and appeal to maximize student consumption of fruits and vegetables. Nutritional benefits of including a wide variety of fruits and vegetables in school meals will be reviewed. Techniques for safe handling and preparation of fruits and vegetables will be demonstrated. The session will also discuss behavioral economics in the serving line, Farm to School resources and more. Stay Calm, Don t Retire: Overview of the Administrative Review Process 2:15 p.m. 3:15 p.m., Nutrition Learning Code 1200 Your school is on the Administrative Review list for next school year. Stay calm, don t retire yet. This session will provide an overview of the Administrative Review process to help you stay calm and enjoy the summer. Special Full-Day Course Pre-registration required. No webinar option available. to 30 participants each day. (presented by the Institute of Child Nutrition)
9 8:30 a.m. 3:30 p.m., Nutrition Learning Code 1100 All menu planning in School Nutrition Programs is now based on food component groups with serving sizes specified by student grade groups. This session will cover the foundations of menu planning and specifics of each food component group. Meal pattern training will focus on Food-Based Menu Planning (FBMP) required for the School Breakfast Program (SBP) and the National School Lunch Program (NSLP). The session will look at whole grain-rich specifics, ways to incorporate vegetable subgroups in menus and take a closer look at ounce equivalent requirements for grains and meat/meat alternates. This is a full-day course offered twice during the scramble. Participants attending this course will not be able to attend any other sessions on the day they are registered.
