2 For some 150 years since the end of the Civil War, decorating the graves of military service members has been the primary activity on Memorial Day. Most cemeteries place an American flag on each service member's grave regardless of how long ago he or she died. Memorial Day, May 30 Memorials in the form of a cross are called intending crosses. At Arlington National Cemetery, the President places a wreath on the monument known as The Tomb of the Unknown Soldier, honoring those soldiers who, in the chaos of war, could not be identified and are 'known but to God.' The tomb stands on a hill at Arlington, overlooking Washington, D.C. As visiting cemeteries on this day became more common, the graves of deceased family members were also decorated. Many individuals remember visiting the graves of grandparents, brothers, sisters, aunts and uncles on this one day a year. And as cremations and natural burials become more popular, online memorials and tributes printed in newspapers are also becoming more common. At natural burial cemeteries, laying of gravestones or memorial plaques is often not permitted. During the 150 years since the custom began, almost every family has lost someone, if not a family member, a friend who was lost is remembered. For all, a prayer for those who are gone is a fitting memorial. Health Corner 5 Food Rules for a Long and Healthy Life 1. Choose whole foods over processed foods. They generally are composed of one ingredient, have been refined as little as possible, and don't include added salt, carbohydrates or fat. Whole foods include fruits, vegetables, nuts and legumes. 2. Get more of your food from plants. Eating plant-based foods and limiting meat can boost health outcomes and possibly add years to your life. Fruits and vegetables are associated with a lower risk for heart disease and cancer, and they help you stay full longer. In a study published in the American Journal of Clinical Nutrition, participants who ate meat less than once a week had a significantly lower risk of death over time than those who ate it more often. Cutting back on red meat can cut your risk of dying early, the National Cancer Institute has found. 3. Slash sugar. It may be one of the best things you can do for your health. The American Heart Association recommends no more than nine teaspoons a day for men and six for women. 4. Eat nuts. They are one of the best snacks. In one study, participants who ate a handful of nuts daily were less likely to die for any reason over a three-decade period. Registered dieticians and nutritionists recommend nuts as part of a diet for a longer life, according to a 2013 New England Journal of Medicine study. 5. Water, coffee, tea and red wine are fine. The vast majority of the long-living people were found to drink these liquids. Voluminous research has shown the health benefits of drinking plenty of water, especially as you age, when it's easier to become dehydrated. Meanwhile, coffee is an antioxidant. Antioxidants are linked to lower rates of diseases and conditions.

In the spirit of celebrating moms, the ladies and the loves of our lives, we are hosting several events this month to honor those who mean the most to us. May 8th we celebrate Mother's Day, with an extravagant brunch. We are including a few of the favorites and a couple new ideas to surprise you. On May 26th, we will celebrate Ladies' High Tea. I will get the opportunity to make Tea Sandwiches, Scones and a few other bits and bites. Toward the end of the month, we are entering what I like to call..."bbq Season!" That's right, Memorial Day is May 30th and starts the illustrious season of barbecuing. We will host a special luncheon that day, and 3 days later we celebrate the Enhanced Care's Western Themed BBQ. Bring your appetite and spurs, "'cause there's gonna be a lotta celebratin' out there." I will keep you all updated as frequently as I can. In the meantime, please continue your comment cards, and join us for the Food Committee. I welcome whole heartedly any opportunities that my staff and I can make better. If you have any recipes, ideas, or just want to talk food - feel free to stop by the dining room or me at mjackson@carltonseniorliving.com. I would love to hear from you... Dear Resident, Families, and Friends, Spring is definitely in the air. The warmer weather has residents visiting in the courtyard, listening to music and soaking up the warm sun. Next time you are out in the garden go in the back and check out the beautiful resident s garden in the two big white planters. They have a variety of flowers growing and I can t wait to see what comes up in the vegetable garden. May be there will be something soon we can use in our cooking class. This time of year brings thoughts of longer days and warmer Sacramento nights. I can t wait for the warm weather to be here every day and every night. Hopefully Marilyn can plan some wonderful activates in our beautiful courtyard. At night when I leave, I love to see residents, families and guests sitting outside by the fountain enjoying the weather and each other. Mark your calendars for our annual Mother s day Brunch this month on Sunday, May 8, from 11:00am to 2:00pm. It is the brunch of the year. You know Shantel and Tou will have great decorations and Mj will have a sensational array of food prepared for us. Please make your reservations now. We want to make sure we have room for all of our guests. Congratulations to our very own Memory Care Unit, (formally known as Our House). Marybel and her team of staff and residents won the Company s first quarter challenge on their interpretation of Claude Monet s Water Lilies painting. It turned out beautiful. If you get a chance and haven t seen it yet, you should head on back to Memory Care and take a look before it comes down. I hope you all are enjoying our Spring time weather. Make sure you take time out of your busy days to stop and smell the roses. Warm Regards, Lisa Schumann

12 Dewitt Jones Today I walked into our living room, sat down and picked up one of two books which have been on our coffee table for months. During the day, I seldom take time to simply sit down and enjoy a good book. But today my eye was drawn to the treasure that has been lying on the glass table. It has a light green cover that is curling upward now and the personal inscription inside has faded, for I ve had it over twenty years. It is a treasured possession because Helen, the woman who gave it to me, had been an older woman who worked at Nordstrom s in Vancouver, Washington, and sent it to me after her retirement with a note that is still tucked into its pages. She writes that she thinks of me every time she looks through it, and now she wants me to have it. She inked in a large asterisk on the photos and poetry she loved the most. Helen died shortly after her retirement but I think of her with great feeling even though we were not friends in the traditional way. NIGHT IS DRAWING NIGH Dag Hammarskjold This book titled,, with photos by the well known photographer, Dewitt Jones, and includes quotes from famous people, has lain there month after month. The only time it is touched is when the dust cloth caresses it. But today the covers were opened and the great treasures came tumbling out and I wondered --- how many books or photo albums do you have that may be crying to be opened so that they can spill the abundance of warm memories trapped between the covers? Through the years I have created at least thirty photo albums, usually one per year during the time that Tom and I have been married. When the children were still at home I used to change coffee table albums every month so we could enjoy the photos together and reminisce. However, now the children have homes of their own; and we live such busy lives that we seldom think to sit down with an album and let the memories flow. And when they come to visit from out of state, looking at photos doesn t seem to be a priority. Dag Hammarskjold. In each book or album that you treasure, that your fingers have lovingly caressed as you secured photos onto the pages so that your life will not be forgotten by the next generations, are the treasures of a lifetime waiting to be enjoyed repeatedly with someone dear, or by yourself. Open the pages slowly, take time to think back to the event, relive it, savor it, and embrace it with open arms. I find that photos bring back memories that had been long forgotten but can be refreshed as though they happened yesterday. You need not limit this to photos albums. Perhaps you have treasured scrapbooks tucked away someplace, filled with programs, tickets, pressed flowers, treasured greeting cards, and more. We have several Memory boxes filled with scrapbooks or zip lock bags that bulging with a year s worth of memories, with the year written in black on the outside. Don t wait any longer to enjoy what you ve collected. Night is drawing nigh--- Written by our beloved Ruby MacDonald Annie Dillard
