5 Eldrimner s principal objectives Eldrimner aims to develop rural areas by contributing to the establishment of new enterprises in the small-scale artisan food processing sector supporting and assisting artisan food companies to develop and, if they wish to, to expand developing and maintaining artisan food processing target group established entrepreneurs, prospective entrepreneurs and others interested in artisan food processing

7 artisan food processing creates unique products with a flavour, quality and character that cannot be achieved through an industrial process. It involves the careful processing of principally local ingredients, often on the producer s farm. Natural processes and handcraft are employed throughout the entire production process. This gives healthy products, without unnecessary additives, traceable to its origin. The artisan food process emphasize and develops traditional products for today s modern consumer.

11 Inspiration-tours Visiting artisan food entrepreneurs with try the artisan food processing. Length: 2 days Beginner s course An introduction mixing theory and practical work with emphasis on the practical side. Usually placed at experienced artisan food producers. Length: 2 days Basic course Basic knowledge about artisan food processing, mixing theory and practical work, including processing of raw material, chemistry, microbiology, hygiene etc. Length: 5 days
12 Artisan food processing for beginners This course comprises three weeks of economy, marketing, hygiene & HACCP, processing localities and two weeks of branch training. Duration: 5 weeks Supplementary course Deeper training in theory and practical production of processed artisan food. Length: 1-4 days. Study-tours in Europe Eldrimner arranges study-tours in Europe for collecting inspiration and knowledge.

22 cooperation Eldrimner organizes courses and meetings in different parts of Sweden together with other projects and organisations. in two regional proects: Matskrået (region of Jämtland/Härjedalen) and Seek traditions create something new, an interregional project with counties in Norway projects and activities in collaboration with organisations like NNF and other stakeholders with experienced entrepreneurs as teachers and counsellors etc.

For example: black currant raisin, rowanberry caprice, lingonberryketchup, Sorselian pesto, Hussini, herb & spice crispbread, bark crispbread, dried whey-cheese, different raw sausages Vit Caprin a modern goat cheese based on traditional methods, developed and marketed by a co-operative of goat-farmers Suovas a traditional Sami product is now protected and developed as a Slow Food Presidia

They are employing, expanding their processing facilities, adding a farm based restaurant, exporting their products etc. all artisan businesses will not become very large. But through cooperation and creation of many more businesses, the artisan entrepreneurs create growth.

We provide expertise, support and inspiration to artisan food producers all over Sweden, both in the start-up phase and also in the further development of their companies. Eldrimner helps entrepreneurs through advisory services, courses & seminars, study-visits, development work and the exchange of ideas and experience. Our goal is that artisan food processing should flourish. The entrepreneurs also participate in planning Eldrimner s work.
