10 February 27, 2017 Nels Bohn, Ithaca Urban Renewal Agency City of Ithaca Dear Mr. Bohn, CCE Tompkins seeks funds to develop a micro-enterprise development program with and for low to moderate income (LMI) catering and food vending businesses in the City of Ithaca. Total project costs will be $80,533 and we are requesting $37,037 from the Ithaca Urban Renewal Agency. CCE Tompkins will contribute $40,996 to support this project. $2,500 is being obtained from external sources including $1,000 secured from the Multi-Cultural Resource Center. Requested funds will be used to expand a successful pilot program, the Food Entrepreneurship Program, which will develop approximately eight micro-enterprises based in the Ithaca City area. Through building links with local LMI food producers and other catering-related contractors, this project will contribute to a more robust local food system economy. The long-term goals of the Food Entrepreneurship Program are twofold: 1) to develop a sustainable and scalable framework and infrastructure that provides a realizable pathway out of poverty through micro-enterprises, and 2) to strengthen community commitment to fairness and opportunity in this sector of the local food industry. This project will develop infrastructure which can then be built out to a larger (and not specifically catering-oriented) LMI micro-enterprise hub in the future. Chris Kai-Jones, Lara Parrilla Kaltman and I will be happy to speak with you or answer in writing any questions you might have about the proposed project. Thank you for considering this proposal. Sincerely, Ken Schlather, Ph.D Executive Director

Groundswell Center for Local Food & Farming provides training and land access to beginning farmers, specifically people of color and refugees who typically have increased difficulty accessing land for production, we see the value in a project that helps low income members of the community to build sustainable sources of income. We have had conversations with the FEP managers, and intend to begin developing a supply network between farmers in our program and the caterers. This will give our beginning farmers another outlet to begin selling their produce. We see the Food Entrepreneurship Program as contributing to the development of a robust local food system which will help to strengthen our local economy in ways that go beyond only helping the Program s participants. Fork & Gavel Cafe in Myron Taylor Hall 524 College Ave Ithaca, NY February 20, 2017 Monika Roth CCETC Dear Monika- I am writing in support of the Grant application being submitted by Cornell Cooperative Extension of Tompkins County. I have been involved as an advisory with some of the efforts that CCETC has been working on to support area food businesses. I am happy to be a part of this program by coming to meet with the participants and offering the knowledge I have learned from my 20+ years of experience as a food entrepreneur in Ithaca. I started out my career in food by experimenting with making food and having my friends and relatives give me feedback, which was vital to my process. I also began working with another food entrepreneur who became my mentor and she was able to show me the ropes and answer the many questions I had about how to start my own business. My mentor s input and influence was invaluable to my success, and I would love to be able to do the same for others who want to create his or her own job in the food world. I have been in the cafe business in Ithaca for over 20 years. My first cafe I opened with 2 partners, and we served all plant based sandwiches, baked goods, desserts, smoothies and juices. We opened a second location because we saw an opportunity to expand and wanted more business. We re-opened a cafe that had closed and ran both locations for several years. The first location went out of business, and we were glad that we had the second one until that also went out of business. We put a bid in on a contract to run a cafe in Mann Library at Cornell and we won that bid so we are happy running a successful business there. During this journey we have experimented a lot and changed our menu and offerings to stay afloat, and we are still here today which is a testament to how many times we have had to reinvent ourselves. We did not always have a kitchen in our cafes, some were too small to include a kitchen so we have 12 years experience with renting kitchen space. Renting was one of the most difficult aspects of our business, to have the uncertainty of whether or not we would have access to an affordable and convenient kitchen. The kitchen space located at CCE is invaluable to burgeoning food entrepreneurs, and I would also love to see a larger kitchen facility open up in Ithaca. I want to help make this happen so that food entrepreneurs have the resources he or she needs to run a business.
