2 UC CalFresh Weekly Update November 27, 2017 One Shields Avenue, 1103 Meyer Hall Davis, CA (530) UC CalFresh Success Stories Success stories from your FFY 2018 UC CalFresh participants can be shared through the online data entry portal: survey/survey.cfm?surveynumber= The nutrition classes have helped me a lot as a person and above all I have learned to plan my healthy meals where I try to use all of the food groups for a healthy plate! I have learned to create my grocery list before I go to buy food for the week, this way I know what I really need and don t buy things I don t. I have learned to not waste food that is leftover! Because it can be used in other meals! Plan, Shop, Save and Cook Participant, Riverside County This class has been very helpful to me and my family. Many of the healthy choices we thought we were making were not as healthy. In this class I have learned to read nutrition labels so it has made our lives so much better being able to see what is really healthy. We also had a lot of concerns about being healthy might be too expensive but in this class, we learned how to save money and be healthy by learning to use weekly flyers, coupons, and learning price per ounce. 4 UC CalFresh, UC Davis and UC ANR in the News! An afternoon of learning at Liberty School in Santa Maria: 4-H students apply new knowledge of nutrition, gardening, community service, UCCE San Luis Obispo/Santa Barbara Counties About three dozen students put their skills to work as they prepared dinner for over 100 guests after hands-on learning that taught them about nutrition, gardening and community service on Saturday, November 18. The 4-H ers from five low -income schools in the Santa Maria-Bonita School District and Oceano Elementary met at Liberty Elementary for an afternoon filled with STEM (science, tech, engineering and math) classes and learning about public speaking, health and the 4-H Youth Development Program. The project, called 4-H SNAC (Student Nutrition Advisory Council) Clubs, is a collaboration between two UC Cooperative Extension programs in Santa Barbara and San Luis Obispo counties UC CalFresh Nutrition Education and UC 4-H Youth Development and the schools. Students experience activities they may not have time to explore at school everything from public speaking, STEM, health, gardening and the like, said Janelle Hansen, 4-H program supervisor. The event marked the third year of youth leadership training. There are so many reasons why today is so important, said Shannon Klisch, nutrition education supervisor for the UC CalFresh Nutrition Education Program. Through our teaching in classrooms, we found that it takes more than just knowledge to change, educate people and improve public health. So, we wanted to develop young leaders to become advocates for their community and identify ways to make their neighborhoods healthier. One of the important things that the project hopes to emphasize is parent involvement with their children, added nutrition educator JaNessa Willis. All the kids here, with our help, are going to prepare a healthy dinner tonight at 5:30 for mom and dad, she said. This way, the kids are teaching their parents what they learned, and we hope they can take this home to their families to create that behavioral change. The menu included mango enchiladas, brown rice and a spinach salad with bean, corn, onions and bell peppers. We re also doing the Linus project, where they can make blankets for kids who are hospitalized and are in need of something soft and comfortable, Hansen added. We hope today lets them experience everything 4-H has to offer for the community, and it lets them foster their leadership skills so they can take what they learned today and teach back at their schools. The project is aimed at students who attend schools in areas that qualify for free and low-cost meal programs. Between 80 and 90 percent of those who attend the Santa Maria-Bonita School district schools qualify. That means, a lot of families may have huge barriers to finding and paying for healthy foods in their neighborhoods, and a lot of students get the majority of their meals on campus, Klisch said. District Superintendent Luke Ontiveros stopped by Liberty Elementary to take a quick peek at the group of 13 children led by UC CalFresh Community Education Specialist Lisa Paniagua digging through soil for earthworms and separating recyclables, trash and leftover food into three separate bins. Having this kind of education absolutely builds relevance to what they can do in the future, Ontiveros said. Today s activities take things beyond classrooms, textbooks and brings them to life through hands-on learning. There s no better way to learn and continue progressing their education. Paniagua and her partner Leonel Palomarez, a UC CalFresh garden nutrition extender and compost expert, taught the kids about the process of garden composting using a combination of nitrogen and carbon sources. They learned about recycling materials that would otherwise be going to a landfill, Palomarez said. We also did some worm composting, which takes leftover food scraps, putting them into the soil, letting them decompose which the worms later can eat. We tell the kids: We feed the worms our food that feeds them, and in turn, their compost feeds the soil which later feeds our food that feeds us. It s a full circle. Bruce Elementary fifth-grader Sara Casanova said she s no stranger to soil, plants and earthworms. In fact, she often helps out in her school s garden. I was so excited to work with worms, Sara said. I already knew they were good for the earth. Her favorite activity Saturday was dividing up the garbage into recyclables and compost. I m going to teach my parents something new today, she added. I m also excited to make enchiladas for them because my mom makes them on Sundays. But this time, I m going to make them for her. Paniagua s gardening class also included a mini waste audit. The kids took all the trash, sorted through it and placed it into three different bins one for garbage, recycling, and compost. She held up a paper plate that was thrown into the trash. The reason why this can t be recycled is because this has a shiny, glossy lining on it around the edge, Paniagua explained. So many people don t know this. Just buy the cheap ones with no gloss and double up. Every year this gets more fun, she added. The kids learned quickly what goes where immediately. I just said, On your mark, get set, go! and they just sorted through everything. I never saw so many kids excited to dig through trash before, she joked. Read full article. 4

6 The Smarter Lunchrooms Movement of California The UC CalFresh State Office would like to see how the Smarter Lunchroom Movement of California has been implemented in your county! Please share your success stories and photos with MaryAnn Mills via The Smarter Lunchrooms Movement of California Monthly Nudge The Smarter Lunchrooms Movement of California Monthly Nudge is a monthly newsletter which provides updates on how the Smarter Lunchrooms Movement is moving throughout California and is brought to you by the SLM of CA Collaborative. The newsletter provides updates, upcoming trainings and events, and more! If you are interested in signing up to receive the Monthly Nudge, please click here! Smarter Lunchrooms Movement of California Celebrates Healthier Choices at California School Nutrition Association Conference Past and present members of the Smarter Lunchrooms Movement of California (SLM of CA) Collaborative gathered in conjunction with the California School Nutrition Association conference in November to celebrate nutrition education and healthier eating patterns in California schools. Dairy Council of California sponsored an SLM of CA reception hosted by collaborative partners University of California CalFresh, California Department of Education (CDE) Nutrition Services Division and California Department of Public Health. The reception was attended by school foodservice professionals from around California, as well as student nutrition activity committees. A poster session allowed school foodservice professionals to share experiences learned from schools that have benefited from CDE Team Nutrition grants and SLM of CA interventions, while distinguished speakers recognized the collaborative and schools for their impactful efforts. Glen Price, Chief Deputy for State Superintendent of Public Instruction Tom Torlakson at CDE, recognized the collaborative for working to ensure, as he shared via Twitter, that all children, all schools, and all communities have access to healthy foods. Price was so impressed by the improvements achieved through implementation of the SLM of CA strategies that he and State Superintendent Tom Torlakson plan to add cafeteria visits as they tour California schools. Caroline Kurtz, PhD, Branch Chief of the Nutrition Education and Obesity Prevention Branch at the California Department of Public Health, shared how the branch has been a contributing partner to the SLM of CA Collaborative and plans to continue the partnership with resources for materials development and professional training statewide. As an example of a partnership in action, Kurtz also addressed continued support for obesity prevention efforts at the local level that will build upon the work being done in schools extending the learning to parents to help them accept and value healthy changes at school. Lisa Melhouse, RDN, SNS, Nutrition Education Program Administrator at CDE s Nutrition Services Division, is charged with oversight and development of nutrition education and training projects for nutrition professionals working in federal child nutrition programs. Melhouse played a critical role in bringing the CDE Team Nutrition SLM of CA grants to 48 schools in California. Melhouse shared that, on average, schools awarded the grants implemented 20 additional smarter lunchroom practices. Schools added murals, signage and student art to eating spaces. Meal participation increased, less fresh fruit and milk ended up in the trash, and schools across the state engaged students themselves in revitalizing the cafeteria and promoting nutrition education truly a combined effort to make a difference in the lives of students by helping them make healthier choices. Banning Unified School District Student Nutrition Advisory Council members presented on their activities and were honored for their campuswide student empowerment and engagement efforts. Students conducted research and menu testing to improve meal selection and reduce food waste. Many of the Student Nutrition Advisory Council activities addressed no-cost or low-cost strategies like improving the cafeteria environment, creating attractive food labels and positioning plain milk. The students are finding value in peer-to-peer education and are already planning future strategies and actions to improve nutrition education and food access in a Riverside County food desert where affordable, healthy options are limited. Barbara Lee, Director of Campus Catering at Livermore Valley Joint Unified School District, was honored for her efforts in adopting innovative, technology-based nutrition education via a smart screen TV in the cafeteria setting. Piloted as part of the CDE Team Nutrition SLM of CA grant, the digital TV offered dual benefits by promoting meal options and providing nutrition education. Through this project, said Lee, I ve learned nutrition messages that are brief, focused and repetitive can be an effective and powerful way to provide nutrition information to students. Learn more about Lee s pilot and results here. The final awardee of the night was April Mackill, Food Service Manager for Plumas Lake Elementary School District. Honored for her efforts in student empowerment and partnership development to support the CDE Team Nutrition SLM of CA grant, Mackill recruited fifth-grade nutrition ambassadors to share daily nutrition messages, highlight locally sourced menu items and even hold taste tests for current and new entrees. A partnership with Principal Marcie Nichols to promote Wonderful White Milk resulted in increased selection of plain (versus flavored) milk and a significant decrease in the overall amount of milk being thrown away. Learn more about Mackill s efforts here. Finally, this reception was an opportunity to recognize SLM of CA technical advising professionals for their services. These individuals, located across the state, work hand-in-hand with school nutrition professionals like Lee and Mackill to initiate the simple, four-step assessment and implementation process that makes the healthy choice the easy choice in the school cafeteria to improve the health of students. 7 Articles & Research Beyond Nutrition and Organic Labels 30 Years of Experience With Intervening in Food Labels, USDA ERS Report Food labels can give consumers valuable information that they cannot verify for themselves. However, labels can also mislead consumers since food suppliers may voluntarily offer only information that increases demand for their products. In addition, consumers may not understand label claims, and instead of facilitating economic activity, labels may increase inefficiency in the marketplace. Food label claims have proliferated over the past three decades. Some of these additions have been federally mandated and some have been voluntary. Some may be certified or verified by the Government or by private-sector entities. This paper from USDA ERS includes five case studies from the past 30 years that highlight roles the Federal Government has played in food labels and the informational strengths and weaknesses of various labels. These case studies include the implementation of Federal standards for the Nutrition Facts label (mandatory for many foods), the USDA Organic seal, the voluntary labeling of food as made without genetically engineered ingredients, the voluntary labeling of meat and poultry products as raised without antibiotics (RWA), and the labeling of the federally defined country of origin of the product (COOL), which is mandatory for some food products. The case studies reveal the outcomes and implications of different interventions. Read report summary. Read full report. Food Swamps Predict Obesity Better Than Food Deserts A new study by the Rudd Center for Food Policy and Obesity at the University of Connecticut suggests that living in a food swamp a neighborhood where fast food and junk food outlets outnumber healthy alternatives is a stronger predictor of high obesity rates than living in a neighborhood with limited access to affordable, nutritious food, or food desert. Food deserts have long been identified as one possible driver of the nation s obesity epidemic. This new study is the first to compare food swamps to food deserts, and measure their association with obesity rates using national, county level data. Importantly, the results show that food swamps are distinct from food deserts. This has policy implications for local communities interested in stemming rising obesity and promoting health equity. While food deserts are certainly a problem in our country, our results show that food swamps, which capture the balance of unhealthy to healthy food outlets, predict obesity rates more accurately than food deserts, said Kristen Cooksey-Stowers, a postdoctoral fellow with the UConn Rudd Center, and lead author of the study. The new research used national data at the country level for adult obesity rates and data on the prevalence of a variety of food outlets such as supermarkets, convenience stores, fast-food restaurants, farmers markets and specialty food stores. The study was published in the International Journal of Environmental Research and Public Health. Read full article. 9 Education & Resources (continued) NCCOR Connect & Explore Webinar: Youth Compendium of Physical Activities, December 6, 2017, 12:00-1:00pm PST The National Collaborative on Childhood Obesity Research (NCCOR) has launched the Youth Compendium of Physical Activities to help childhood obesity and physical activity researchers and practitioners estimate the associated energy expenditure of a variety of activities in which youth participate. The Youth Compendium of Physical Activities provides measures of energy expenditure for 196 common youth activities including sedentary activities, standing activities, playing and participating in games, and walking and running. The Youth Compendium is the culmination of a 5-year effort between NCCOR, the Centers for Disease Control and Prevention, the National Institutes of Health, and experts in the field of youth energy expenditure. The Youth Compendium represents the first in the field based entirely on youth data. Previous versions relied on energy cost of various physical activities in adults which were standardized into values for children. However, the energy costs of physical activity change as children grow and mature, making adult values inappropriate for youth. The Youth Compendium of Physical Activities is designed for researchers, health care professionals, teachers, coaches, and fitness professionals alike. It can be used as a valuable resource for expressing energy expenditure by a variety of sectors including research, public health policy, making, education, and programs which encourage physical activity in youth. The Youth Compendium is easy to search so users can find an activity of interest. Additionally, all data files are available for download. The companion paper, with a complete description of methods and data sources has been published in the journal Medicine & Science in Sports & Exercise and is available here. For additional information, or to register for this webinar, please click here. Implementation awards range from $50,000-$100,000. Planning grants are for schools or school districts, state and local agencies, Indian tribal organizations, small and medium-sized agricultural producers or groups of small and medium-sized agricultural producers, and non-profit entities working with schools or school districts that are just getting started on farm to school activities. These funds are intended to help these entities organize and structure their efforts for maximum impact by embedding known best practices into early design considerations. Planning awards range from $20,000-$50,000. Training grants are intended for state and local agencies, Indian tribal organizations, small and mediumsized agricultural producers or groups of small and medium-sized agricultural producers, and non-profit entities to support trainings that strengthen farm to school supply chains, or trainings that provide technical assistance in the area of local procurement, food safety, culinary education, and/or integration of agriculture-based curriculum. Training awards range from $20,000-$50,000. Complete applications must be submitted on grants.gov by 11:59pm ET on December 8, For additional information, please visit: (continued on next page) 9
