Dr. O Hea has over 30 years of experience as a family medicine practitioner. He also serves at Stone County Hospital and Stone County Nursing and Rehabilitation Center. He formerly worked as a physician at George County Hospital and Community Medical Clinic in Lucedale. Kevin O Hea, MD Dr. O Hea received his medical degree from the University of Western Ontario. He also holds a Ph.D. from the University of Illinois and a Master of Science and Bachelor of Science from University College in Dublin, Ireland. Dr. O Hea has been published in numerous journals over the years on various studies related to nutrition, metabolism, insulin and diabetes. He is married and has four grown children and three grandchildren. Mr. Kitchens is 72 years young and was born in Laurel, Miss. He has been married to Mrs. Veida Kitchens for 50 years. They have one late son, Boyd; one daughter, Dana; and one granddaughter, Shelby. Mr. Kitchens enjoys watching TV, socializing with his wife and peers, and going on outings. He is also involved in our Resident Council. Mr. Kitchens is very friendly to be around and always has such a sweet smile on his face. Congratulations, Mr. Kitchens! We love you! Resident Melvin Kitchens Davin Taylor Clark, Maintenance Department employee of the month And the winner is Davin Taylor Clark! Congratulations, Davin! For the entire month of December, you will reign as the employee of the month! As a reward for your hard work and dedication, you will receive your own parking spot and a cash prize. Davin works in the Maintenance Department and also helps out in the Laundry Department. He has been employed with LVRNC since May 2013. Davin is originally from Leakesville and enjoys competition shooting, outdoor activities, watching Netflix and playing the drums. Davin is a very friendly person who doesn t mind helping out in any way he can. Congratulations, Davin! Keep up the good work!

That s why we make sure to plan several events to maximize the time our residents and their families get to spend together and enjoy the holiday cheer. To kick off the 2014 festivities, we ll have an eggnog social at 2:30 p.m. on Friday, Dec. 5. We also have three other socials scheduled for the month, all at 2:30 p.m. We hope to see you there! Friday, Dec. 12 Friday, Dec. 19 Monday, Dec. 22 Fruit Social Hot Chocolate Social Wine and Cheese Social Next, we ll have a visit from children from Sand Hill Headstart and Stateline Headstart. December 2013 December 2014 Wendy Edwards, RN From the Desk of the Director of nursing: seasons eatings! holiday eating Tips for Diabetics For diabetics, the holiday season is fraught with temptations. Candy is everywhere. Your wellmeaning co-workers bring in plates of cookies that taunt you from the break room. You ve received invitations to party after party, where it seems like the foods were chosen specifically to test your resolve. Before you decide to give everyone a piece of coal and hibernate through the holidays, remember that being a diabetic doesn't mean you have to give up your favorite seasonal foods. With a little preparation, you'll be ready to face any holiday head-on and still enjoy it. THINK ABOuT THE TIMING OF YOuR MEAL Many families eat large meals at odd times during the holidays. Plan in advance for how you will handle making changes if your meal does not line up with your regular meal schedule. TRY HEALTHIER VERSIONS OF YOuR FAVORITE HOLIDAY FOODS Will your favorite casserole taste just as good with fat-free or light sour cream? Steam green beans instead of sautéing them in butter. Use a little less sugar in your fruit pie and accentuate the natural, sweet flavors of the fruit. REMEMBER: SMALLER PORTIONS Don't feel like you have to sample everything on the table. Have a reasonable portion of your favorites and pass on the rest. For example, if stuffing is your favorite, pass on rolls. Choose either sweet potatoes or mashed potatoes. If you really want to try everything, make your portions smaller. Overall, try to keep your total carbohydrate intake like a regular day. PLAN ADDITIONAL SNACKS Have foods to nibble on while you are cooking or waiting to eat. Make sure the foods you choose won't sabotage blood glucose levels before the meal. Bring a platter of raw or blanched veggies with your favorite low-calorie dip or have a few small pieces of low-fat cheese. Page 5

Family Council meeting December 2014 2013 Leakesville Rehabilitation and Nursing Center would like to remind you that a Family Council Meeting will typically be held on the second Tuesday of each month at 5:30 p.m. Should this day fall on a holiday, please contact the facility for alternative dates. Recipe of the Month resident Bennie Jean hendrix Old Time Georgia Peach Blossom Cake Ingredients 1 C sugar ½ C butter 3 tsp. baking powder ½ C 100% whole milk 3 eggs, whites only 1 C flour (generous) ½ tsp. cornstarch 1 tsp. peach extract ½ tsp. almond extract Finely grated coconut Confectioners icing or vanilla frosting Directions 1. In a mixer, beat together sugar and butter until light. 2. In a measuring cup, measure flour and stir in baking powder and cornstarch. 3. In a separate, clean bowl, beat egg whites until they hold stiff peaks when the mixing paddle is lifted from the bowl. The whites should still be shiny (not dull). 4. Combine milk with flavorings/extracts. 5. Add flour mixture, a small amount at a time, to the sugar/butter. Beat for 30 seconds. 6. Add milk, then flour, alternately until all has been used. 7. Gently fold in the beaten egg whites, turning the bowl and using a spatula in a downward slicing motion, lifting mixture up from the bottom of the bowl until mixed. Be careful not to deflate the puffiness of the egg whites as you mix, so that the cake will remain light in texture. Do not over-mix. 8. Spread butter evenly in two buttered and floured square cake pans. Bake at 375 F for 10 minutes, then reduce heat to 350 F until cake test is done in the center. The batter will make two thin cakes. 9. Allow to cool for 15 minutes, then remove from pans. 10. Sprinkle generously with finely grated coconut between the layers. Drizzle top with confectioners icing or vanilla frosting. Sprinkle with coconut. 11. Enjoy!... to our residents!
