Great Cypress Village Gazette Sign up sheets for any of our breakfasts, lunches, dinners or special events, are located on the bulletin board in the clubhouse. Please remember to sign up showing you d like to participate. Also, anytime you are planning to bring a dish to a function, please note on the sign up sheet what you will be bringing. This helps others decide what they might like to bring or what is still needed. If you have signed up planning to attend and something comes up, please remove your name or let the person chairing the event know you will not be attending. PUZZLE SOLUTIONS Mediterranean Orzo Salad If anyone has a favorite recipe that they would like to share please email me with the recipe or web link to SMWOOD@UWCLUB.NET Directions For the dressing: In a jar or bowl, mix together the olive oil, lemon juice, garlic and some salt and pepper until totally combined. For the salad: Bring a pot of water to a boil and cook the orzo according to the package directions. Drain and let cool. Place the orzo, chickpeas, red and yellow tomatoes, olives, feta, parsley and onions in a large mixing bowl and pour the dressing over the top. Stir to combine and taste; add salt and pepper if needed. Refrigerate at least 1 hour before serving. Top with more feta and parsley and serve as a main dish salad or with grilled chicken, fish or burgers! 8
