Message from the Director, Rose Swidan We are officially into the beautiful summer season. Make sure to stay safe and keep yourself hydrated. Remember to stay in the shade if you re going to be outside for long periods of time. Don t forget to wear your sunscreen and hats! Project Fresh is starting up again to help you purchase fresh fruits and veggies. If you qualify and receive coupons, please use them at the Farmer s Market at City Hall every Wednesday from 12 to 6pm. We are trying to gather sign-ups for a lunch and river boat ride to Portofino, please let our staff know at the Senior Center if you re interested. Sounds in Downtown is back, keep the schedule below handy! There is great music, dancing, food and good times with friends. Message from Mayor Burcroff I am wishing you all a very happy and safe Independence Day. This year our nation is celebrating it s 240th birthday. While we celebrate with barbecues and fireworks, we must also reflect on our fortune to live in the best country in the world. We are blessed to live here and we thank all of those that fought and gave their lives to give us our freedoms. Here in Romulus we have some fun, free activities coming up for the summer. Sounds in Downtown has two concerts this month and we also are showing a free Movie in the Park, Zootopia, on July 29th. This is a familyfriendly movie that we all can laugh at and enjoy, so please bring a friend and come out to the show. Our Farmer s Market is also off to a successful start, with a record number of vendors being offered each week. There are great food, dessert and craft items to purchase. Recipe Exchange: Chicken Fajita Soup Ingredients 1 lb. boneless, skinless chicken breasts 2 (10.75 oz.) cans condensed cream of chicken soup 1 c. salsa 2 c. frozen corn 1 (15 oz) can black beans, drained/rinsed 1 1/2 c. water 1 t. ground cumin Directions 1/2 t. dried cilantro 1 c. shredded cheddar cheese Optional Toppings: Sour cream Diced tomatoes, avocado, green onion Lettuce, cilantro Tortilla strips 1. Spray your slow cooker with cooking spray. Add chicken to the bottom of the slow cooker. 2. In a medium sized mixing bowl, mix cream of chicken soup, salsa, corn, black beans, water, cumin, and cilantro. Pour over the top of chicken. 3. Cook on low for 4-6 hours. Remove the chicken and shred with two forks. Place back into the slow cooker and add shredded cheese. Continue cooking until cheese has melted about 15 minutes. Serve with your favorite toppings.
