JOB DESCRIPTION JOB TITLE: SERVICE TEAM / UNIT: Guild Catering REPORTING STRUCTURE: Catering Manager Catering Supervisor Comida Pieminister (TTO) Assistant Catering Manager Grove Diner Catering Assistants Catering Assistants MAIN PURPOSE OF THE ROLE: To be responsible for the day to day operational running of the Catering outlets including evolving the food offering, whilst upholding all relevant Food, Health and Safety Policies and procedures. KEY RESPONSIBILITIES: 1. To pro-actively support the management of the Catering Department on a day-to-day basis in accordance with Guild Policy. 2. To assist on matters relating to staff training, rotas, recruitment and supervision of student staff in line with budgets. 3. To ensure that correct security and food hygiene procedures are carried out at all times. 4. To pro-actively support the Manager in providing a safe and welcoming social environment for the Membership. 5. To up-hold the Students Guild Strategic Objectives and Purpose. 6. To ensure that all Guild procedures are carried out effectively and promptly.

To pro-actively support the Manager in achieving or exceeding the annual budgeted sales and contribution targets for the Catering Department, taking particular responsibility for tight expenditure and margin control 8. To be a personal license holder for the Students Guild. 9. To ensure a friendly and efficient service to all customers by all team members, and ensure that all reasonable service or menu related requests are accommodated. 10. To ensure the Food Hygiene Regulations, Food Allergen Regulations, Health and Safety Regulations and Licensing laws are adhered to at all times. To proactively assist the Catering Manager in the preparation and delivery of all Health and Safety procedures and documentation. DESCRIPTION 1. To pro-actively support the management of the Catering Department on a day-to-day basis in accordance with Guild Policy. To be responsible for the running of the outlet/s in the absence of the Manager as required. To be responsible for the ordering of all goods required in the catering area, liaising with the Manager, to maintain adequate stock levels, ensuring that levels are reduced to a minimum at the end of each term. To oversee all deliveries, checking and signing of delivery notes, and ensuring all stock is put away tidily. To ensure that the full menu is always available, taking into account customers dietary needs and the variation in numbers of people throughout the day. To assist in the planning and organising of functions and events as and when required. To ensure that all areas are kept clean, tidy and well displayed. 2. To assist on matters relating to staff training, rotas, recruitment and supervision of student staff in line with budgets. To deliver comprehensive and appropriate training to all new permanent and casual staff and on-going training to existing staff. To partake in any training deemed appropriate and necessary to the role. To assist the Manager in drawing rotas for casual staff ensuring that budgeted wages to sales targets are met. To assist in the interview and recruitment process of casual staff.
3. To ensure that correct security and food hygiene procedures are carried out at all times. To be responsible for keys, opening and closing alarms and security procedures in the absence of the Manager. To assist in the daily and proper banking of cash when required. To ensure the security of cash, including the tills and floats, and that change requirements are covered when required. To lead in maintaining a regular, effective cleaning and maintenance programme in keeping with high standards of hygiene and abiding by Health and Safety regulations. To ensure that all Environmental Health Regulations are upheld. To maintain accurate records according to the Students Guild Food Safety Policy. To observe the Food Hygiene and Allergen Regulations at all times. 4. To pro-actively support the Manager in providing a safe and welcoming social environment for the Membership. To maintain high standards of service as required by the Students Guild. Encourage a pleasant atmosphere and a suitable, safe environment in which students can work. To be aware at all times of the Students Guild Health and Safety Policy and abide by the recommendations outlined in the document. To become a qualified First Aider. To observe Fire regulations and be a Fire Marshall. 5. To up-hold the Students Guild Strategic Objectives and Purpose. To adhere to the Students Guild Strategic Objectives. To continually consider ways of improving or changing products in the Catering Department, consulting the Manager and the Membership. To carry out any other reasonable duties as required by the Manager, as and when necessary. To ensure that all paperwork is authorised, coded correctly and sent promptly to the appropriate person. To ensure all Food, Hygiene, Health and Safety documentation is used correctly and stored safely for future inspection

To pro-actively support the Manager in achieving or exceeding the annual budgeted sales and contribution targets for the catering Department, taking particular responsibility for tight expenditure and margin control To maintain food and catering areas, to the highest standard required, ensuring effective rotation and control of stock, keeping wastage to a minimum. To implement procedures and practices to reduce wastage to a minimum. To ensure strict control of all direct costs, student staff wages and overheads where appropriate as directed by the Manager. To ensure that portion control and other stock management procedures are adhere to, ensuring that budgeted, monthly margins are met. 8. To be a personal license holder for the Students Guild. To be fully accountable as a personal license holder for the Students Guild and uphold at all times the 2003 Licensing Act principles. To be certain that all staff are aware of the implications and responsibilities of working in licensed areas. To keep abreast of all licensing related legal and procedural obligations and frameworks and implement procedures where necessary To be responsible for the completion of any licensing related paperwork or applications to vary proposals To help and liaise with police/licensing officer on any issue regarding the Catering Outlets To keep the DPS informed of all licensing and security matters at all times. 9. To ensure a friendly and efficient service to all customers by all team members, and ensure that all reasonable service or menu related requests are accommodated. To ensure that all staff members are fully trained in customer service and the customer complaints procedure 10. To ensure the Food Hygiene Regulations, Food Allergen Regulations, Health and Safety Regulations and Licensing laws are adhered to at all times. To pro-actively assist the Catering Manager in the preparation and delivery of all Health and Safety procedures and documentation.
PERSON SPECIFICATION CRITERIA ESSENTIAL DESIRABLE QUALIFICATIONS, TRAINING AND EXPERIENCE Good general education, typically to the Higher/A level equivalent in catering Intermediate Food Hygiene certificate Personal License Holder 2 years previous experience in a catering outlet Demonstrable experience of working effectively on own initiative SKILLS, KNOWLEDGE AND ABILITY Knowledge of legislation relevant to catering, First Aid, Licensing, Health & Safety Computer literate with experience in Word and Excel Able to create and maintain effective working relationships Knowledge of key issues affecting students and Higher Education Knowledge of the role of student unions and elected officers Able to overcome hurdles and problems under pressure Supervisory skills, to recruit, motivate and train staff PERSONAL ATTRIBUTES AND ATTITUDES Self motivated and self reliant Flexible and adaptable Prepared to work occasional evenings and weekends Stamina to work in a busy environment Team Player Encourages learning for self and others Proactive Tactful and diplomatic
