GENERAL MANAGER S MESSAGE Dear Members, What a fantastic month February was at Miles Grant. The participation from the members has been wonderful. We ve experienced record crowds for dinners and social events. Thank you to all who have been participating and supporting our Club. We have a lot of social events and golf activities going on this month. Look in this newsletter for all the events and mark your calendars so you don t miss out on the good times. Please remember to make your reservations early to assure proper service. If you are reserving for Trivia Night, please indicate if you will be having the alternate menu choice. We will assume you would like the Trivia entrée if you don t specify the alternate choice. The budget process for next fiscal year, 2017-2018, is now in progress. The budget process will require involvement from committees, myself and our department heads. We are looking to present a well-balanced preliminary budget in the coming weeks. In closing, I d like to thank the many club volunteers and committee members who have worked so hard in making Miles Grant a special place. Our new Bocce Courts were funded and built by members. The Pickle Ball facility is up and running again by volunteers. I recently met with an anonymous donor who wishes to fund our entire Tennis Facility enhancement project that includes constructing two new rigid awnings for shade and weather protection as well as an entirely new fence design and other fittings. It is this kind of commitment and generosity from our membership over the years that has made MGCC such an extraordinary and successful organization. Patrick Tully General Manager Miles Grant Policy - Leave of Absence At the discretion of the Board of Directors, an LOA may be permitted for golf and/or tennis privileges only. Such LOA will only be granted to a member physically unable to play the sport with his/her medical condition verified by documentation from a physician. If granted, any such LOA will be effective for a minimum of three months beginning the first day of the next quarter with a maximum term to the end of the fiscal year (June 30 th ). Fees will be automatically resumed at the beginning of the next fiscal year unless written notice is provided requesting a change in status no later than June 1 st for the following fiscal year in accordance with Article VI, F,8 (Annual Dues and Fees) in the MGCC Rules and Regulations. Please note LOAs will not be granted for the final quarter (April-June). An administrative fee will be charged for any approved LOA. Miles Grant Policy - Errant Golf Balls Golfers are financially responsible for window/structure damage from errant golf balls. If you experience damages to your home due to an errant ball, please contact the player and your insurance carrier, as Miles Grant Country Club will not be responsible for damages. MEMBER NEWS CHEF BRIAN BURGER S COOKING TIPS OF THE MONTH: Convection ovens are the norm in most commercial kitchens and they are becoming popular in home kitchens. * What Is a Convection Oven? Convection ovens may be gas or electric. The difference between a convection oven and a traditional oven is that the convection oven has the added bonus of a fan. The fan circulates the hot air, resulting in more even cooking, browning and crisping. * Even browning makes food look and taste better and it keeps meats juicier. Baked products remain moist and get the most out of convection heating. You will produce some of the best cakes, breads, pies and muffins to come out of your kitchen. There's no need to rotate pans like cookie sheets halfway through the bake because of the even heat distribution. Unless you forget about them, it's hard to burn cookies or even get a crunchy bottom. Convection ovens shorten cooking times by about 25 percent. * Convection Oven Operation Many current stove models have an optional convection feature. This means that you can use the oven in the traditional manner or turn on the convection option at will. The majority of recipes, however, are written with traditional ovens in mind. All ovens vary, so be sure to read the owner's manual for your particular convection oven. * For traditional recipes, cooking time is generally 25 percent less when cooking an uncovered recipe. Start checking for doneness about three-quarters of the way through the recommended cooking time. For example, if a recipe calls for a 40-minute bake, you should check it at 30 minutes. If you don't want the hassle of trying to figure out the reduced cooking time, simply reduce the oven temperature 25 F and use the original cooking time. * Some convection ovens automatically reduce the temperature by 25 degrees. For instance, if you choose Convection Bake and set it to the 350 F called for in the recipe, the oven will adjust and warm to 325 F. If you want a true 350 F, you will need to set it to 375 F as this allows you to bake at the quicker time. Again, your owner's manual is key to understanding the particular model you own. * Your Recipes in a Convection Oven * If your recipe calls for covering the food (such as casseroles or Dutch oven dishes), you will most likely need the traditional amount of baking time, so no adjustment should be necessary. If convection is optional on your oven, it's probably best to not even bother using it. Just use the conventional method. Center your baking vessel on the oven rack so air can circulate freely and evenly around the food. Shallow roasting pans or cookie sheets are recommended. Meat roasts and poultry should be placed on a V-rack over a shallow pan. * When food is cooked uncovered in a convection oven, it browns faster. This does not necessarily mean it is done. Be sure to use a meat thermometer or the recommended testing method in the recipe instructions rather than going by outward appearances. If you are using parchment paper in your pan, you will most likely need to weight down the corners with pie weights so the fan doesn't blow the paper over the food. * Overall, you will find that you prefer some foods on traditional bake and some on convection bake. It will take some experimentation for your favorite dishes, but once you get it, you will be very happy. This is the best part of having the option and why it's worth looking into when shopping for a new oven. Our MGA/WGA automatic sign up has worked great this year. We find players play more and don t have to worry about the inconvenience of signing up twice a week. With any new system there are a few kinks but, not many. If you would like to be on the list, stop by the Pro Shop The golf course has been incredibly busy this season w/ fantastic member and group play!! We have had a few record breaking money days for greens/cart fees. We have offered Saturday specials that have greatly increased play on an otherwise slow day. His email address is: toast5811@aol.com PETER HAUTH REPORTS: Men s Tennis: This season Miles Grant tennis has to accept that the other teams are stronger and we have lost one of our key players. This results in a league that has five clubs that are close in the middle of the pack with only the Monarch tri-club group running away with it. We are presently in the middle of the pack. We had bad losses against Monarch and against Mariner Sands but held our own against Buttonwood and Harbour Ridge with wins against Summerfield and Cascades. Our regular morning program continues well with mostly 12-15 players showing up on Monday, Wednesday and Friday. A special THANK YOU goes to one of our newer members, Robert Gramer, who spent time and money to fix our ball machine. It is now once again available for practice by our members. The machine is quite old and Robert did a great job fixing it up for everybody's use. So Miles Grant tennis is alive and well - and now we need the cooperation of the MGCC so that we can obtain the funds needed to fix up the sitting areas that are really pretty dilapidated and are often an embarrassment when the other clubs visit us. MIKE PISANO REPORTS: The Treasure Coast Senior Men's Tennis League season is near the halfway mark. We are currently in second place after getting beaten across the board by Mariner Sands in our last match. The three matches before that were total successes as we beat Buttonwood in a 6-0 whitewash on the nastiest day possible at Miles Grant. We followed with a 6-1 victory at Monarch Country Club and a great 6-2 win at home with exciting third set tiebreak victories on courts one and three. We are undefeated in tiebreaks so far this season. The level of play in the league has improved steadily since we began three years ago. Seventy must be the new sixty. We now have seven teams up from five in 2015 and six last year. Page 9
