Advance Cake Decorating 36 hours Saturday: 9:00am 4:00pm (including 1 hour lunch); Duration 6 days marks on the final cake and also attend 27 contact hours (75%) of classes in order to receive the certificate. Participants who are unsuccessful in the examination will be allowed to re-sit it at a cost of $200.00 on the next available class examination date. Persons who have completed TTHTI s Cake Decorating short course or any other basic cake decorating course and are desirous of developing their decorating skills to a professional level. Entry Requirement: Persons must have completed TTHTI s Cake Decorating short course or any other basic cake decorating course. Participants must be competent in making and using gum paste and fondant and be able to correctly cover a cake. Advanced Rolled Fondant Advanced Gum Paste Advanced Royal Icing and Butter Cream Mounting and Layering cakes Special Occasion Cakes Cake Finalization and Presentation Venue: Chaguaramas (TTHTI) Attire: Participants are required to wear black pants/skirts, white shirts, hair covering and aprons as well as whole shoes in the kitchen. Tools & Equipment: A list of the basic tools/equipment which participants must purchase for their own use along with a list of suppliers will be provided. Achievement Participants will receive a TTHTI Certificate of Achievement. Students must gain 50 or more 6 TTHTI

Advance Cake and Pastry Making 30 hours Tuesday and Thursday: 5:00pm 8:00pm; Duration 10 days Saturday: 9:00am 4:00pm (including 1 hour lunch); Participants must gain a total of 50 or more marks at the end of the course and must also attend 23 contact hours (75%) of classes in order to receive the TTHTI Certificate of Achievement. Participants who are unsuccessful in the examination will be allowed to re-sit it at a cost of $200.00 on the next available class examination date. Duration 5 days Persons who have completed TTHTI s Cake and Pastry short course or any other basic baking course and are desirous of increasing their baking skills and diversifying into more complex products. Entry Requirements: Applicants must have completed TTHTI s Cake and Pastry Making course or any other basic cake and pastry making course. Introduction to Desserts Basic Syrups and Creams Plate Presentation Specialty Cakes Custards, Puddings and Soufflés Pastry Petits Fours Achievement Venue: Chaguaramas (TTHTI) and San Fernando (Venue to be advised). Attire: Participants are required to wear black pants/skirts, white shirts, hair covering and aprons as well as whole shoes in the kitchen. Tuesday & Thursday: 5:00pm 8:00pm (Chaguaramas); Duration 10 days Persons who are interested in creating signature drinks using contemporary techniques. Entry Requirements: Applicants must have completed TTHTI s Professional Bartending course or a Bartending course with another organisation. Special Requirement: Participants must be eighteen (18) years and over. Those under that age will need to have permission from a parent or guardian to enrol in the course. Venue: Chaguaramas (TTHTI) Attire: Participants are required to wear black pants/skirts, white shirts as well as whole shoes for their practical examination session. Bar Management 30 hours Saturday: 9:00am 3:00pm (excluding lunch); Duration 5 days Persons interested in learning the essentials for profitably managing a bar, inclusive of effective beverage cost controls and purchasing procedures. Entry Requirements: Kitchen Tools and Equipment Nutritionally Balanced Meals Measurements Stocks, Sauces and Soups Cooking Techniques for Poultry, Meats and Seafood Introduction to Vegetable Cookery Cooking Techniques for Rice, Pasta and Potatoes Discount: Available for married or soon to be married couples only. Cooking with Confidence for Offshore Workers 54 hours Monday Friday (week 1) Monday Thursday (week 2) 9:00am 3:00pm; Duration 9 days Cooks, Assistant Cooks and Galley Men employed with local and international vessels. Attire: Participants are required to wear black pants/skirts, white shirts, hair covering and aprons as well as whole shoes in the kitchen. Tools & Equipment: A list of the basic tools/equipment which participants must purchase for their own use along with a list of suppliers will be provided. Entry Requirements: Practical Cookery Fundamentals of Baking Food Safety Principles and Environmental Protection A Certificate of Participation will be awarded. Persons wanting to further advance their food preparation, presentation and service skills. Entry Requirement: Applicants must know basic cooking techniques or have completed TTHTI s Cooking with Confidence and Cooking with Confidence 2 courses. Participants who have not completed these courses will be considered based on their work experience on a case by case basis. Persons who have completed any other food preparation course where principles of food preparation, menu planning and food service were covered will also be considered. Entry Requirement: Delivering Quality Service Effective Communication Interacting with Difficult Clients Projecting a Professional Image Workplace Etiquette Developing Service Relationships Me As Part of the Service Equation Achievement Each participant must pass a theory assessment successfully to be awarded a certificate. Dining Etiquette 6 hours Day &Time: Saturday: 9:00am 3:00pm (including lunch); Duration 1 day Persons desirous of improving their formal dining skills and persons involved in managing a restaurant environment or managing events with a dining component. Attire: Participants are asked to be appropriately attired for a formal dining environment. Effective Housekeeping Skills 10 hours Tuesday & Thursday: 9:00am 3:00pm (including 1-hour lunch); Duration 2 days Persons employed in the hospitality sector whose job duties entail preparation and maintenance of rooms and other living spaces as well as those desirous of opening a small property. Attire: Participants are asked to wear loose clothing and comfortable footwear for the practical housekeeping session. Participants who are not successful at either part of the assessment will be allowed to re-sit the assessment at a cost of $800.00 for both theory and practical; $350.00 for the theory only and $450.00 for the practical only. The Government Assistance for Tuition Expenses Programme (G.A.T.E) does not currently cover tuition fees for the Short Courses offered by the TTHTI. Are there any pre-requisites for short courses? Our short courses do not have any academic prerequisites. However, some Short Courses do require that participants have previously completed another short course at TTHTI or a similar course elsewhere. We do advise that persons with literacy challenges, inform us of such when registering for a course. How do I apply to pursue TTHTI s short courses? To apply for a Short Course: 1. Obtain a short course application form by either downloading a copy from TTHTI s website www.tthti.edu.tt or by visiting our Campus to collect a copy. 2. Complete the application form. 3. Attach a passport size photo with your or the applicant s name clearly written on the back 4. Unfortunately, living accommodation is only available for our full-time students. Can short courses be used as pre requisites for longer programmes? A short course is considered a Craft Level Certificate and can thus be used when applying for an Associate or Diploma programme. The entry requirements and procedure for those programmes still apply. Additionally, persons may use the short courses with Certificates of Achievement, to gain exemptions from similar courses in our Diploma and Associate Degree programmes. This is subject to TTHTI s exemption policy and approval process. What financial guidelines should I be aware of when pursuing courses at TTHTI? Cancellations 1. Should TTHTI cancel a scheduled class before its commencement, TTHTI will refund 100% of all fees 2. Should an applicant, having paid all the required fees, cancel their application in writing before the start of a scheduled class (having not attended any classes), a 5% penalty fee will be charged. 3. Should an applicant, having paid all the required fees, cancel their application in writing after the start of a scheduled class, having not attended any classes, a 10% penalty fee will be charged. 4. Should an applicant, having paid all the required fees, cancel their application in writing after the start of a scheduled class, having attended at least one (1) class, a 50% penalty fee will be charged. Applicants in cases 2 and 3 will be given the option to transfer to another course or to the same course being offered on a different date. However, this may only be done once. After this occasion, the penalty will apply. 7. Application fees are non-refundable. Refunds Refunds are paid by cheque only and must be collected in person at TTHTI s office. Should someone be designated to collect on the applicant s behalf, a letter of authorization must be submitted to collect the cheque. Should an applicant wish the cheque to be mailed to then, a handling fee of thirty dollars ($30.00) will be deducted from the amount to be refunded. Is it possible to have a short course delivered to a group of person or have it customized for my company? The Training and Development Department can deliver any Short Course for groups of ten (10) or more persons. This is referred to as In-plant training. We can also customize these courses to fit your training needs or deliver other courses that may not currently be part of our short course offering.
