3D rendition of Restaurant/Café interior. 1. Introduction In the summer of 2018, the A.M. Qattan Foundation will be inaugurating its new building in Ramallah Palestine which is planned to serve as its operational base and as a multifaceted cultural centre. The 7730m 2 building will be the first green building to be registered with the Palestinian Higher Green Building Council and is planned as a hub for creativity and knowledge production, with a friendly environment for people to congregate and interact in a variety of educational, cultural and artistic activities. The building will house state of the art facilities that will provide core infrastructure for the Foundation s programmes and will exemplify the Foundation s commitment to innovation and excellence in content and in form. These new state of the art facilities will further advance the Foundation s cultural and educational interventions and widen its network locally and internationally. In addition, the new building will provide a number of public facilities including: A Two Storey Library (540m 2 ) which will offer books, periodicals, films, databases as well as reading, study, and group work spaces and a curated display case for. Multipurpose Hall (277m 2 ), a flexible space that can host up to 200 people and be divided into three halls, with soundproof partitions. This space will be used for conferences, workshops, lectures, seminars, etc. Gallery (411m 2 ): A state of the art gallery 1
Small Cinema/Theatre (186m 2 ): With a capacity of up to 128 people and a retractable seating stand, it can be used to stage theatrical productions, film screenings, lectures, workshops, and as a rehearsal area for theatre and dance companies. 2. Specification The AMQF intends to operate the Restaurant/Cafe and its services directly, and is requesting the services of an external consultant (s) to develop the concept for the Restaurant/Cafe along with its operational plan. 3. Requirements The consultant is expected to develop the outcomes below, through a participatory process with key members of staff. A. Concept: In accordance with the considerations listed below (3), the consultant is to propose a branding and menu concept, ambiance, target audience, special events, key promotional messages etc. B. Operational plan: Including but not limited to, how the business will be run and managed, opening hours and scheduling of activities, staffing plan and job descriptions, alcohol policy, material sourcing, vendor lists, budget and pricing, and promotional plan. 4. Key considerations The Restaurant/Cafe is a social enterprise and will be expected to carry out and promote the values of the Foundation, and to be a venue for some of its activities. The Restaurant/Cafe must be an income generating activity for the Foundation. Any income from it will be re invested in the Foundation s programmes. The new building was designed to be a green building, i.e. smoking will not be allowed in either the indoors and outdoors spaces, biodegradable materials and eco friendly cleaning products should be used, waste should be separated, etc. As an environmentally friendly building, menu ingredients should be sourced from organic sources as much as possible. Local and International guest chefs will be invited regularly. The Restaurant/Cafe will be offering food to staff at discount rates during working hours, and must cater for events and meetings organized on the premises, while also being open to the public. No music above 75 decibels at any time. Utmost cleanliness is key to any operation at AMQF. 5. Available information This document provides available information about the Café/ restaurant in three annexes below: Relationship of the Café/restaurant to the AMQF building facilities. Detailed plans of the Café/restaurant and area sizes. Listing of furniture and equipment that will be supplied by April 2018. 3

Competencies A university degree in business management, hospitality, enterprise management, or a diploma in culinary studies with proven experience. Evidence of relevant and successful experience. Excellent communication skills. Proficient in either Arabic and English languages; proficiency in both is a plus. Knowledge of the Palestinian gastronomy/ culinary/ hospitality sector is preferable. 7.
