Mifflinburg Area District Spring Asparagus Salad "This is a nice and simple cold salad. It's a great way to celebrate the arrival of the asparagus crops!" Ingredients 1 tablespoon rice vinegar 1 teaspoon red wine vinegar 1 teaspoon soy sauce 1 teaspoon white sugar 1 teaspoon Dijon mustard 2 tablespoons peanut oil 1 tablespoon sesame oil 1 1/2 pounds fresh asparagus, trimmed and cut into 2-inch pieces 1 tablespoon sesame seeds Directions 1. Whisk together the rice vinegar, red wine vinegar, soy sauce, sugar, and mustard. Drizzle in the peanut oil and sesame oil while whisking vigorously to emulsify. Set aside. 2. Bring a pot of lightly-salted water to a boil. Add the asparagus to the water and cook 3 to 5 minutes until just tender, but still mostly firm. Remove and rinse under cold water to stop from cooking any further. 3. Place the asparagus in a large bowl and drizzle the dressing over the asparagus. Toss until evenly coated. Sprinkle with sesame seeds to serve. This Week s Baseball Wrap-Up The Mifflinburg Boys Baseball Team took a win this week against Danville, 6-5. Max Troutman was the winning pitcher of the game. Mifflinburg defeated Shikellamy, 5-4, in a close game. Noah Stetler hit the game winning RBI and Michael Warren had two triples and Darin Miller also had a triple. The Boys Varsity Tennis Team won all five matches to take the win against Shikellamy last week. In the singles category, Nolan Beck won his matches, 6-2, 6-0, Brahm Buoy won his with 6-0, 6-0, and Tom Lichtel also won 6-0, 6-0. In the doubles category, Ben Haines and McClenason Wagner won, 6-0, 6-3 and Jason Schanck and Braden Hurst won 2-6, 6-3 and 6-2. Congratulations to Nolan Beck for being named The Daily Item s 2017-2018 Scholar Athlete of the Week for his skills on the tennis court and in the classroom!
