2 Welcome! Welcome to the 2014 Tennessee Value-Added Beef Conference. The first of its kind, this conference has been designed to provide educational information and networking opportunities for those interested in producing and marketing locally-raised beef products. Cattle producers, farm-based retail meat marketers, and operators of harvesting and processing businesses have been encouraged to attend. The conference is one initiative of the Tennessee Value-Added Beef Program and is supported in part under an agreement with the Tennessee Department of Agriculture and the USDA, Agricultural Marketing Service Federal-State Marketing Improvement Program (FSMIP). A special thanks is extended to everyone who assisted with the conference planning and execution and the many agencies and organizations they represent, especially the Tennessee Beef Industry Council, the Tennessee Cattlemen s Association, the Tennessee Department of Agriculture and the Tennessee Farm Bureau Federation. On behalf of the planning committee, we also thank those who are serving as speakers, moderators and exhibitors. And, of course, a special thanks is extended to the conference sponsors.
