Super spoilers, wonder spores and die-hard microorganisms are back: New insights to integrate these super foes in food spoilage risk management. Microbial spoilers are still among us and, if we don t care, they can eat the best part of our food! Fighting them contributes to extending the shelf life of food products and reducing food waste. Who are they? Omic methods provide in-depth knowledge about microbial diversity but phenotypic characters are also important to fully understand various microbial behaviors. 4 PREVIOUS EDITION SPOILERS2013 international scientific symposium was a remarkable success: It attracted 154 participants from 24 countries. The large participation of the food & diagnosis industries (30% of the participants), the contributions of the leading academic and technical organizations on the developed topics, highlighted the widespread interests related to "Microbial Spoilers in Food ". Indeed, we reached maximum capacity due to the overwhelming response and interest from presenters, speakers, and attendees! The range of subjects covered by the communication panels included biodiversity of microbial food spoilers, characterization methodologies, enumeration methods for quality indicators, spoiler behaviour, fitness and functional properties, inactivation processes and product stability assessment and spoilage risk assessment. The conferences produced a variety of perspectives on increasingly critical issues, and new strategies for better control. 5 PARTICIPANTS TESTIMONIAL It is the only event dedicated to spoilage. This meeting fills a gap and has everything to be part of the food science calendars. The congress gave me some good internationals contacts. Number of participants was perfect to get in contact with each other and even pay attention to posters Thank you so much for a wonderful conference, I thoroughly enjoyed it and learnt a lot! The program was well equilibrated and the level of the contribution was high. Do not change the concept, never change a winning concept, well done! I thought the organisation was excellent before and during the congress, excellent reception, good coffee breaks and a very enjoyable gala dinner The last congress was on spoilers in food in Quimper and I found that it was really well organised. Here I have listed some examples for you : - The proceeding book was given to each participant with a USB stick beside the book itself. - The book was small enough to carry easily. - A chance was also given to some poster presenters to present their research topic orally within poster sessions. If I remember correctly, 10 min of time was given for each poster presenter and it was called flash poster presentations. - There was no parallel session, which makes it easier to concentrate on oral presentations and of course on posters. - I must also mention that the lunch and the coffee breaks were really good.
